First timer making carrot cake - any easy recipes that taste good?

Well next week I will be getting one year older, as I'm heavily pregnant with GD, I'm really restricted on traditional birthday cakes so would love if you could share your easy, tasty carrot cake recipes. Would be much appreciated!

Can’t remember exactly which but I recommend ones that use oil instead of butter to ensure moistness . Or maybe a mix. Carrot cake can be dry . Try one of bbc good food that’s well rated

I don’t like carrot cake as a rule

The barefoot compensation one with the ginger marscapone crossing is amazing - with our workout the growing. I think I twice the sugar in it but the cake is very moist and tasty.

Unfortunately for me I have a sweet tooth, is there anything I can use that's natural that will still give me a relatively sweet cake?

Have been making this for about 15 years, certain family members request it when they're visiting. I don't bother fannying about with the candied carrots though

Second the inspired taste recipe, it's delicious.

However it uses an incredible amount of sugar so if you're restricted in not being able to eat traditional birthday cakes you'll be absolutely no better off with a carrot cake. Whilst I normally agree with the 'everything in moderation' stance in day to day life, it's a bit different when you're dealing with a health condition. How heavily pregnant are you? Could you delay the cake until baby is born and enjoy some indulgent savoury or sugar free snacks instead?

I use the hummingbird bakery recipe. It has oil instead of butter so it stays moist and airy. It's the best one ever!!

Even though I do have a sweet tooth I mostly don’t bother with the icing when I do this recipe because it’s so nice without.

Thank you for the concern, I'm 33 weeks pregnant - and will be induced in early April. I take my blood glucose readings 3 times a day and it usually is well controlled w/ medication + insulin at night, but obviously sometimes I may be in the red zone with my readings depending on a matter of things. I most likely won't have time to even bake a carrot cake till after baby is here but it's nice to have some recipes for when I can bake. Thanks all for your contributions.

I have a sweet tooth, too, but the cake is sweet enough from the carrot and sultanas, plus it's an American recipe so uses way more sugar than it actually needs.
