Cooking with Quorn

I've never used it before but have bought a bag of Quorn mince and am determined that dh who is vegi is going to try it and like it. So if I do a lasagne or spag bol with it do I need to add more liquid to the recipe or just a simple swop for mince?

um, yeah, it will say on the bag - kind of make up everything without the mince (onions, toms etc - whatever) and when that is all cooked and nice add the quorn and top up from kettle.

God I am crap at describing this stuff - will get some vegetable lentil experts over, hang on.......

I use it in exactly the same way as I use mince. ie I sautee onions and garlic, add the quorn mince and herbs then add tomato puree and then tins of tomato and cook it for about 20 minutes.

I use quorn a lot but don't think I've ever cooked with proper mince so not sure if liquid content varies - I just make a basic ragu in the way you would with meat, using passata I've never had to add any water

I make the sauce first and then when it starts to taste nice ie cooked, then I add the quorn. If I am making bol sauce or chilli con carne then I add it about 10 mins before it's done. Obviously if it's a lasagne I add it just before I layer the dish and put it in the oven to cook.

They always say on quorn packets not to overcook it - though not sure what will happen if you do.

It only takes a few minutes to cook and doesn't need extra liquid; it's not dried, so doesn't soak liquid up. Overcooking apparently spoils the taste (such as it's got) and can also make bigger items like sausages tough.

Don't expect him to like it though; it's revolting stuff! Although I'm biased ... it makes me ill.

My mum did the most gorgeous ever shepherds pie last night with frozen mince Quorn.
It was fabulous!! Even my son ( the pickiest eater - Just try it... Just try it... JUST TRY IT!!!!!!! ) ate every scrap - I nearlly had tears. My dad ( plain meat / 2 veg hates anything different ) enjoyed it. We didn't tell him it wasn't meat.
I made a fab chilli with it - added a little gravy for richness - even the vegetarian friend enjoyed it

There is a good quorn website, the bolognaise recipe is lovely. There are loads of other recipes on it too.
