Can we have a "can I freeze/fridge/risk eating this" thread?

I'm having to change my diet radically due to diabetes dx. Feel like a beginner cook all over again, I cannot risk an upset stomach and I'm trying lots of new recipes.

But I live alone, many recipes are "serves 4" and hard to reduce how much is made and/or are oven cooked and I'm trying to keep energy costs down too.

Eg I made this broccoli gratin today :

It's cooling in the kitchen (I eat late yes), recipe itself says keeps in fridge for 4 days but that means I have to eat it every day for 4 days. It's yum but if I can freeze it I'd like to do so for one or 2 portions.

This won't be my only query along storage lines and I frequently see others posting similar questions, I thought also as me others are trying to keep food and energy waste to a minimum so many of us are doing things a little differently to what we're used to and may benefit from a thread where we can quickly source answers?

You can portion and freeze most things once they’ve been cooked. The texture/quality may not be the same on defrosting and reheating though. I will say that recipe is fat heavy and, whilst I know you are wanting to get your sugars under control, you don’t want to end up with high cholesterol as well as diabetes.

I ate 2 month old eggs yesterday and, so far, I appear to still be alive.

My take on freezing food is to try it, and if it defrosts and heats up ok, it's freezable.

I often batch cook and freeze meals, and portion up mince and freeze it etc.

I often cook on the hob rather than the oven/grill, for reasons of cost.
