Mine don't last long enough to get past the sell-by date...

Chocolate passed its sell by date is up there with leftover wine.

Stuff of myth and legend

How much longer do you want to keep it for?
I think I'd just use it up over the next month or so, but not freeze.

It's prone to getting yucky if you let moisture in, so if you must freeze it, wrap it up well first. Maybe let it chill for a bit before putting in the freezer.
Or, you know, just eat it up. Or send it my way.

Gah! I am a chocolatier. I had a really long reply typed out explaining this and lost it. Jist of it is: cheaper compound chocolate (eg cadburys) do whatever you like with! Decent quality couverture chocolate, never store in the fridge/freezer as it is way too moist and will ruin taste and texture. A cool, dark place is absolutely fine, and it has a great date, 2 years from production date to BBE. Of course it'll be safe to eat after BBE, but will lose flavour and texture. Hope that helps!!
