Lazy group brunch ideas - no eggs or gluten

I'm a one pot sort of cook. Make ahead where possible, or at least minimal prep as I don't want to be stuck in the kitchen.

My go-to would normally be Shakshuka and Kedgeree Confused. No idea what to make!

Bubble and squeak, can add bacon or cheese. Just make sure you have potatoes and cabbage / green veg the night before.

Could you do sweetcorn fritters but use gram flour instead of wheat flour? Serve with bacon and avocado.

Homemade granola with fruit and yogurt.

Maybe a baked porridge with dried fruit and nuts.

I would probably dona version of a traybake. Cubed potato, tomato, mushrooms, onion and maybe some other veg with bacon, olive oil, herbs and seasoning. I know you say eggs free but if that is only for one or two people. I would do two different trays and crack a few eggs on top if you have people who eat eggs

Kedgeree works without eggs. I wouldn't eat hard boiled eggs as a child, but I still loved kedgeree.

You need gram flour and baking powder to make eggless corn fritters. Half GF flour and half gram flour plus BP also works.

I'm gluten free and potato and rice based dishes beat gluten free bread every time. I think most of these suggestions sound glorious.

A lot of sausages are gluten free now. The "finest" are usually marked as such on the front too.

Gluten free sausage and bean bake with gluten free rolls. That would fit in with your one pot idea.

Another idea is a Polish breakfast combination of a bowl of cottage cheese with chopped chives, and platters of sliced tomatoes, naice ham, grated carrot salad, and various breads. It looks very appealing and colourful when laid out.
Or a typical continental breakfast selection of cheese and charcuterie if you carefully selected gluten free items.
Finish it off with a home made tropical fruit salad. Perfect!

Hash browns, baked beans, garlic butter mushrooms, sausages, bacon and halloumi sounds like heaven to me

Otherwise what about breakfast wraps? Can use corn tortillas (old El Paso make ones which are corn only and gluten free certified) then add some combination of halloumi strips or pork mince, bacon, cheese, avocado, mushrooms, salsa, etc.

If you can find gluten free bagels or English muffins, then can do those with sausage patties, cheese slices, mushrooms, etc. or smoked salmon and cream cheese which is always delicious.

Can’t believe you’ve not gone for bubble and squeak? That, with thick sliced smoked bacon and beans - I’d marry someone who gave me that for breakfast!

Easiest option does seem a tray bake though - sling some sausages in a roasting tin for 10 mins, add bacon and hash browns, another 10 minutes, add mushrooms and cherry tomatoes on the vine, final 10 mins.

I would do eggs on the side for those who do eat eggs (or two trays, add eggs with mushrooms and tomatoes) and baked beans on the side…

I realise this sounds ridiculous but bubble and squeak without using leftovers feels a bit wrong 😅

I might give up on one-pam and try the European style breakfast spread idea.
