Veg box has kale in it again. Any ideas?
I've done kale chips and steamed kale with a lemon & butter dressing. Both fine but not inspiring.
I'm not keen on how tough it is or the flavour tbh so any ideas that overcome both those things would be great!

We put kale in a sausage casserole tonight with leek and mustard mash. Was fab!!

I only like it as a roast dinner veg really- subdued with yummy, salty gravy and spread amongst bites of chicken and potato.

It is a very bitter, woody tasting vegetable to me. I wouldn’t want it solo.

Toss it in a tiny bit of oil, sprinkle with salt, bake until crispy. It loses the bitter kale taste and is really lovely.

Make it into a pesto-ey sauce for pasta. Boil it (don't overcook) with a clove or two of garlic, maybe a leek too if you have it, drain, add good olive oil, handful of parmesan, some pine nuts and blitz it. It can be a bit bland but plenty of cheese will help.

I freeze it and chuck a handful in most things I cook in the minutes of cooking. Risotto, pasta sauce, veg lasagne.

Fry in coconut oil. Makes it easier to scrape into the bin.

Soften a couple of crushed cloves of garlic in olive oil in a pan with a lid. Wash your kale, pulling the leaves off the central rib if that's substantial, then cut or tear into pieces. Add to the pan with the water clinging to it & stir around until it starts to wilt, then add a good shake or two of soy sauce. Put the lid on & cook until soft (5-10 mins depending on variety). Check & stir from time to time & add a splash of water if it's starting to stick. Add a good big tablespoon of sweet chilli sauce a little way into the cooking time if you like & stir through.

If that doesn't taste good, complain to the box scheme & tell them to grow a different variety!

Basically you want to cook with oil & salt, not boil in water. Shredded, massaged with a spoonful of olive oil & some sea salt & a few mins in the oven on top of roasted whatever is also good.

Pan fry some pancetta/bacon (maybe mushrooms if veggie) in butter then add the chopped kale, cook until just soft.

Take out and fry an egg until the edges are all lovely and crispy, then put on top of the bacon/kale. Sprinkle some chilli flakes and you've got dinner in about 10mins.

Having said that there's a genetic component to how bitter brassicas (kales, cabbages etc etc) taste to an individual, so you might just have the wrong variants to like it however cooked.

Remove the thick stems. Mix together oil, salt; sugar, powdered ginger, then add kale . Spread on a baking tray.
I only roast it when the oven is already in use, so timings can be 10-20 mins depending on temp. It's a bit like Chinese "seaweed".

I love it tossed in sesame oil, garlic granules, sea salt and chilli flakes then roasted until it is crisp. Just keep cooking until it is crispy. You have to turn it a couple of times.

DH makes a delicious ham hock soup with kale and beans in it. Long slow cooking softens it up.

It's also good in salads as the main bulk. It's incredibly filling. I once walked 40k steps in NYC on just a bowl of trendy kale salad from a gallery cafe and wasn't feeling even slightly hungry by the time we got back late in the evening. Great staple.

I used to hate kale but love it now. I've got used to its texture.

basically potatoes and kale/cabbage boiled & crushed. served with sausages (rookworst) and gravy.
