can i reheat risotto the next day....

...as have made loads and want to give to DD for lunch, but I can hear this little rumour floating round in my head going 'never reheat rice'....is this just an old wives tale? And while we're on the subject can I reheat chicken the next day?

the rice should be ok as long as it was cooled quickly and put in the fridge. The danger is when it is left out too long at room temperature as bacteria (associated with rice) grows rapidly at room temperature and can make you very ill. Chicken is fine to reheat the next day - heat to piping hot and let it cool (same goes for the rice too)

It's true that you could get food poisoning from eating reheated rice. But it's not actually the reheating that's the problem ? it's the way the rice has been stored before reheating.

Uncooked rice can contain spores of Bacillus cereus, bacteria that can cause food poisoning. When the rice is cooked, the spores can survive. Then, if the rice is left standing at room temperature, the spores will germinate into bacteria. These bacteria will multiply and may produce toxins (poisons) that cause vomiting or diarrhoea. Reheating the rice won't get rid of these toxins.

So, the longer cooked rice is left at room temperature, the more likely it is that bacteria, or the toxins they produce, could stop the rice being safe to eat.

It's best to serve rice when it has just been cooked. If that isn't possible, cool the rice as quickly as possible (ideally within one hour) and keep it in the fridge for no more than one day until reheating.

Remember that when you reheat any food, you should always check that it's piping hot all the way through, and avoid reheating more than once.

Goodness, I'd never heard that. I treat rice just like anything else.... put it in the fridge and reheat at will. Hmmmm, will have to be more careful.

My dd has had lots of 'next day' risotto and so far lived to tell the tale....

When I make risotto I always make extra, put the extra portions into sealed tubs, allow to cool and freeze straight away. When I want it I turf the block out into a bit of water, wait for it to melt back in then eat. The consistency isn't quite the same, but it still tastes good. Haven't got food poisoning yet.

I have reheated risotto and rice zillions of times, over the last 4 years, for ds 4.
I never knew anything about this and thought that my sil was over-reacting, but clearly I was wrong.
Mind you ds is like me and has the stomach of an ox, whereas dh only has to look at a bit of old chicken - mind you he has had campylobacteur, so it a bit prone.

You can make balls of leftover risotto with cheese in the middle, roll in breadcrumbs and fry. I've never tried it but seen the recipe a couple of times.
