Sweet potato recipe ideas

I'm having to cut back on carbs and am reluctantly reducing my potato intake, but have found out that sweet potatoes count as a vegetable, so I've bought some for the first time.

Does anyone have some nice recipe ideas please? tia

I make a lovely West African sweet potato and peanut soup/stew. The recipe is at home. But I'm sure you could Google for similar. It's actually vegan, which I am not, but totally delicious.

I love doing a Traybake with chicken thighs, sweet potatoes, red onions, red peppers, green olives and feta. Handful of fresh coriander on at the end. All in one dinner, and just the one tray to wash up though you can do a green salad on the side too.

I love sweet potato cut into 2cm cubes. I then make a sort of tin foil pocket and put it in there with a bit of garlic butter or olive oil and crushed garlic. Seal it up and cook for about 30 mins.
Empty it into a bowl and mix in some feta cheese and spring onion. I usually just have it with some quinoa cooked with a stock cube.

Sweet potato fries and garlic mayo are also a firm favourite in this house.

Put cubes/chunks on skewers with cherry tomatoes and drizzle with pizza oil before grilling - the French stuff with rosemary, dried chillies and cumin/coriander seeds in the bottle.

Carbohydrates There are 20.4 g carbs in a white potato versus 16.8 g carbs in a sweet potato. Fiber There is 1.4 g of fiber in a white potato versus 2.4 g in a sweet potato, the latter of which is a good source. Sugar There is 1.6 g of sugar in a white potato versus 5.5 g sugar in a sweet potato.

The HCP running the pre-diabetes course I am on has said that sweet potatoes are a vegetable and can be counted as such, whereas potatoes are not. Who am I to disagree?

I just roast some sweet potato wedges, adding some chilli powder, olive oil, and pepper. Saute canned chickpeas. Mix together and add Tahini. Sometimes, I'll add cherry tomatoes to the chickpeas if I have some spare.

Not a recipe as such, but when I make cottage pie I make mash for the top as normal for the rest of the family (with cheese on top) and for myself one corner of the cottage pie I do with mashed sweet potato with no cheese for myself.
Same with a roast dinner. I do roast sweet potatoes instead of regular potatoes.

funnily enough being on a pre-diabetes educational course is how I came to look into them a bit more!

they can be counted as a veg because they have more vitamins and minerals than white potatoes, but they're one of the highest carb veggies, so it's still prudent for pre-diabetic people like you and I to be careful not to go silly eating a ton of them. I'm not saying you can't have them at all, just be mindful that their effect on your blood sugar will be more similar to a potato than to a piece of broccoli.

I hope you do well with your course, I had a fantastic improvement in my blood sugar number after about 6 months doing the course.

With respect, many NHS practitioners are peddling outdated information when it comes to diabetes.

You need to stop blood sugar spikes. Carbs and sugars cause blood sugar spikes. Sweet potatoes will cause a blood sugar spike. They should be avoided if you want to lower your blood sugar levels.

You need to eat a low carb, especially very low sugar diet. You do NOT need to eat a low fat diet, or avoid fats for the sake of diabetes management, although if you are overweight, then losing weight will of course be better for you.

Many, many NHS nurses point diabetics/prediabetics to a standard "healthy" low FAT diet, when instead they should be advising a low CARB diet.

Obviously, you need to make your own decisions about what you eat, but if you are serious about lowering your blood sugar levels, then you should consider limiting sweet potato intake, just as you would normal white potatoes. I think they have marginally more nutritional goodness in them than a white potato, but from a blood sugar management point of view, they are equally as bad.

This isn't an NHS nurse. This is someone with post-graduate qualifications in nutrition, physiology and a sheaf of other scientific letters after their name too, as we found out when someone on the course asked.

Thank you, but I didn't start this thread to ask for advice about what to eat to manage diabetes, I've got advice about that coming out of my ears. I started it because I wanted some sweet potato recipes, which some pp's have kindly provided, because I've never eaten them before.

@mrsm43s I think sweet potatoes are more than marginally nutritious than the totally unrelated white potato!
