What are your favourite soup recipes?

I've just bought a blender and am thinking of making soup. Something along the lines of tomato or carrot for starters.

I'm on a diet so lower calorie and no cream etc would be better.

Basic soup recipe.

The actual proportions are not important, just go with what you have.

Gently fry some onions and any of the following if you wish - garlic, celery, carrots, swede.

Add your veg of choice. (if doing tomato soup, peel and deceed first.)

Stir it roud for a little bit then cover with water or stock. Simmer till veg is cooked and whizz in your shiny new blender.

Season to taste. If you use stock you will probably find it needs little, if any salt.

Flavour combinations
Carrot and corriander. Cook the stalks, throw in the leaves just before whizzing.

Squash/pumpkin. I like to add cumin seeds and a bit of chilli at the frying stage. It also works well if you add a handful or more of rinsed red lentils before cooking. This makes it quite thick and filling.

Tomato and Basil

Parsnip and apple. Again add the apple just before whizzing.

Leek and potato

I love sweet potato and pear. If you add a bit of mint to serve, it is really tasty (although i always forget that bit).
Follow the instructions above and use about 5/6 good size sweet potatos and 3/4 pears.

Also pumpkin (butternut squash) and ginger

One thing I find makes soup much nicer is if you make your own stock. Chuck a load of veg into a pan and slowly bring to simmer, leave for hour. Avoid strong tasting veg like parsnip. I also leave the skins on everything, including the onions.

Onion soup:

lots of onions: slice and fry in a drop of oil until translucent
Equal quantity of potatoes: slice, throw in with the onions, add water to cover and the crust from some parmesan cheese. Cook half an hour or so, scrape the gunk off the parmesan and discard the rest.
Blend 1/2 of the soup. Salt and pepper.
Enjoy
