Kebab shop cabbage

Years ago I used to live in the UK and enjoy a kebab after a night out 😝

I have tried to recreate this recently using shredded cabbage, salt, olive oil and lemon juice but it just doesn’t seem to have the tangy tartness that I remember.

Does anyone have a recipe they would like to share please?

They use lots of jif (jiffy? Can't remember name) lemon juice and sumac I suspect.

I worked in a kebab shop as a teen, they used the bottled lemon juice, white vinegar, oil, garlic powder and far more salt than you'd think. It was usually made up the night before near closing time ready for the following day and left in the fridge until opening time. This was in Scotland though so not sure if it varies regionally.

Also, with proper kebabs, it comes with pickled jalapeno, onion, garlicky yoghurt. Sometimes in fancier places, you might find "zhug" which is blended herbs and garlic, chilli (parsley and coriander leaf) and olive oil.

Yes, this! Same basic recipe I remember, it's so good.

I used to live over the road from a brilliant Turkish kebab shop. They were delightful people and kept me well fed. That is how they did their red cabbage.

Am now thinking back over the rest of their menu and drooling hardcore.... love this style of food.
