Salad soup?

I’ve got a slightly disappointing Too Good To Go bag from Morrison’s this evening. Three sliced loaves, no problem freezing those, and three bags of salad!

The salads aren’t even bags that would be dold in store, they’re bulk bags that the Food To Go counter uses:

Shredded iceberg lettuce 500g
Tenderleaf salad 300g (spinach, bulls blood and red chard)
Veg raw slaw 1kg (pink cabbage, cabbage, carrots, broccoli and spring onions)

There’s only me and the cats and dogs, they don’t like salad and I’m not keen on raw cabbage (slaw). Could I chuck the iceberg lettuce and the slaw mix together in a soup, or would they be better done as separate batches? I’ve never tried lettuce or cabbage soup. What else would I add?

I’ll eat the tenderleaf salad through the week.

Morrison’s magic boxes used to be awesome :(

Not helpful if you'll eat it anyway, but the tenderleaf freezes - any of the babyleaf-type salad bags will. Freeze then crush and use like spinach - add a handful to pretty much anything.

Not sure if it will work with iceberg but pea and lettuce soup is one of my favourites - works with romaine/little gem so maybe worth a try?

The slaw mix sounds like the base of a stir fry to me 🙂

Not sure the tender leaf salad is going to last more than a day or two.

I'd make soup using all of it, save a bit of the tender leaf stuff. Add a tin of mushy peas and liquidise, add some frozen peas. Flavour with mint sauce. You can then freeze portions.

Bloody disappointing box.

You can make a really nice cabbage casserole. Sounds horrible but it's really nice with grated cheese on top and freezes really well.

Fry the onion, add cornflour and then vegetable stock. Add in the cabbage and cook until soft. You can add the usual herbs etc. Really savoury and comforting.

I'd leave out the iceberg, but if you've got extra virgin olive oil and parmesan, possibly pine nuts or other unsalted nuts, blitz into pesto and freeze. I've done this with many a nag of sorry looking salad leaves and/or fresh herbs.

Thank you all, some super suggestions! I had no idea salad leaves could be frozen, that’s brilliant! And peas with lettuce for a soup, yes, I have frozen peas and mint, it sounds lovely.

I’m not sure I have anything in that I could stir-fry.. oh maybe salmon fillets? I’ll do a thick soupy cabbagey casserole and then a week’s lunches are sorted.

Actually healthier than the pastries,,sweet treats and processed meat that magic bags sometimes include, I shouldn’t have been so quick to grumble!

Green soup. Really easy and just about anything can go in. I use those cheap midsized courgettes as a base. Sweat down with a bit of oil or butter. Add leeks spring onions cauli or broccoli. Anything vaguely Green including celery and lettuce. When the hardy veg has softened add some veggie stock and blitz. Add some cream or yogurt if you like. Season to taste.
