Polish Meat Pierogi recipe please!

I have to start making my own pierogi to feed my addiction to these yummy dumplings.

Can you help, please?

The dough is made from flour, salt, egg, and a little tepid water. Knead well, roll thinly and use a teacup to cut into circles.

Various fillings. Eg mashed potato mixed with cheese and an egg; or minced beef with onion.

Spoon cooked filling onto the circles of dough; fold over and seal with a little water.

Boil in a large pan until they float to surface.

Alternative Method
Invite mother-in-law; vacate kitchen.

I once got caught up in a pierogi-making frenzy with MIL and her sister. We seemed to make thousands, laid out on floury teatowels in regiments fit to destroy the Russian army.

I try to avoid making them now as they are quite labour-intiensive. My Anglo-Polish DH swears they should be eaten with tomato ketchup.

qs-- most likly.. I have eaten them in the past but never tried to make any before... you could probably use creamcheese if you mixed it untill soft... and add a small pinch of sugar to sweeten it

QS are you trying to lose weight? If so STEP AWAY FROM THE PIEROGI. They look delicious but blardy hell, not diet friendly at all, not even slightly. They are the type of food that you can have one or two of, perhaps at a party. Now if you go to the trouble of actually making them, are you likely to be able to eat just one or two? If so you are a better woman than me

thre's a new polish shp near us and the perogies are the BEST (and this coming from girl who grew up in a city with many perogies!)
we boil them then fry them with some onion and bacon. then serve with creme fraiche.
oh yeah. def diet food.

My husbands aunt is able to buy them direct from a very good polish london restaurant, she brings them over frozen. Then I boil, then fry with red onion for a few minutes.

If it is sweet pierogi, I serve with some mango youghurt, which is lovely.

Carmenere, YES I am trying to diet, NO I cant eat less than 10 in one sitting..... They are soooo good. [heavenly face emoticon]

But, as we are moving to a place where there are very few poles, and no polish restaurant or delicatessen, I have to learn to make them myself!
