Hi, I hope you don't mind me asking this here.
I'm a University student looking to gain a better understanding of basic rules with cooking/food storage. There's only so many questions my mum can handle and googling gives very conflicting advice, so who best to ask than mums who have experience!
I'll start with a few questions of my own but if you think of any tips that might be useful for me to know please comment :)

  • If you batch cook a stir fry with meat, how long can it remain in the fridge for?
  • How long is it alright to leave meals/sandwiches/salads in a bag without a cool box?
  • Can you freeze egg dishes and do they defrost okay?
  • Can you only reheat a meal once?

Stir fry should be fine for a couple of days, although be warned that the noodles may not reheat very well/ can go a bit mushy.
Sandwiches as long as it’s not a boiling hot day and they are in the sun then should be fine for lunchtime on the day if taken out in the morning, but if you have a cool bag lunch bag even better.
I’ve never frozen egg based meals so no help there.
Reheating I would stick to once as a rule. This is imperative for chicken and/or rice dishes.

I've frozen an egg fritata into quarters and it comes out okay. Defrost first then microwave, but I wouldn't freeze something like an egg custard

I make and freeze quiches and they're fine, so some egg dishes are obviously OK to freeze.

And when you reheat things make sure it is hot all the way through.

I bet there's a free online basic food hygiene course that might help you feel more confident?

When putting any food in the fridge, you need to cook it quickly first & then it’ll last 3 days.

Only ever reheat a meal once & make sure it’s piping hot

haven’t ever froze anything egg based and as above, proving the temperature is cool enough a few hours is fine x

The rule with eggs is to take them out of their shells

I would happily eat leftovers for a week after cooking.

Food out of the fridge I'd eat within say 8 hours unless it was summer and then sooner.

I have a strong stomach though and I think with trial and error you'll figure out how long you can get away with various things.
