Does anyone have any good recipes for leftover Stilton. I have 2 massive wedges that need using up. I would love some tried and tested suggestions for cooking with them if anyone has any recommendations?

It will last well past the BBE date - like all cheese.

Broccoli and/or celery & stilton soup is my go-to recipe for using up tired veg & cheese.

No specific quantities, just sweat some onions, then add the chopped veg & stock. Cook until tender, blitz & add as much cheese and cream as you want.

Stilton will freeze. I'd portion it out, then defrost when I want some. The texture is crumbly, but the flavour remains.

Crumble over over oven chips after you've cooked them. And pop under the grill again.
In a salad with mango and rocket and grapes, walnuts and honey.. bloody lovely

put a largish chunk into the blender with equal amounts of cream and mayonnaise, salt and pepper- best blue cheese dressing ever.

On digestives with butter.. yum

In a salad with beetroot and walnut. Stirred into a basic risotto along with parmesan. On beef burgers. Added to an omelet along with slim slices of sauteed apple. In a salad of green beans and walnuts. On toast, with sautéed mushrooms.

My DH likes macaroni cheese made with Stilton but I don’t like it so can’t tell you if it’s nice.

If you like fish this fish pie recipe is one of my favourites. Otherwise just crumble it over a couple of good steaks or burgers

Mix it with leeks, mushrooms and creme fraiche for a pasta sauce.

Finely grate (it will crumble loads but just press on) and mix 1/3 cheese with 2/3 lightly toasted wholemeal bread crumbs. Blanch cauliflower florets for 3 mins and leave to dry. Dip cauli in egg (or surprisingly mayo) and then the cheese and breadcrumb mixture. Place on a baking try and bake until crisp.

I often fry off pancetta in a dry pan, add v finely diced onion and garlic, a splash of white wine and petit pois, diced asparagus if I have it. Crumble in stilton, add a dash of cream and pasta with a bit of cooking water if not saucy enough. Bit of pepper and there you go. One of our favourite dinners.

I don't I'm afraid as tried it in a local cafe. I would imagine a normal quiche recipe then chuck in some pre cooked broccoli and crumbed Stilton. Yum!

Crumble and freeze in a container in portions for future recipes. Freezes fine

I also buy big Portobello mushrooms and season them - crumble Stilton into them and bake in the oven for 10 - 15 mins
I can easily (sneakily) eat 4 by myself they are so good !
