Advice needed please!

Hi there

I’m not a very confident cook, but can follow a recipe!

I’m hosting some friends next week and I’m going to do a few curry dishes. The only thing that I’m not sure on is if I cook in advance (the morning/early afternoon) what would be the best way to reheat them?

Am doing two chicken dishes, vegetarian option and sag aloo potatoes!

anybody have any advice? I have a meat thermometer to ensure I don’t poison everyone!

I would just reheat in pans on the hob - or go with recipes that are specifically designed to be made ahead as they will have tried and tested reheating instructions. Curries always taste better when made ahead as the flavours develop. Enjoy your party!

Are you asking for advice on reheating or for specific recipes?

For vague dish ideas I would do a tangy/spicy chicken, a creamy chicken, and a dal makhani which gives a good variety and would work well alongside the saag aloo. I can point you to specific favourite recipes I love if you would like, but generally for Indian recipes I love Meera Sodha, Monica Haldar (the Spice Club), Chetna Makan, and Dishoom.

Thanks - just reheating advice really.

I’m making Chicken Makhani, Chicken Kashmiri, a aubergine vegetable dish and some sides :-)

looking forward to it albeit a bit nervous as cooking for 11!

As above, reheat on the hob (gentle heat, not too hot, for long enough to get piping hot).

Sounds like a lovely meal! You could also cook everything the day before if that would help it to be stress free on the day.

I have found that curries in ceramic/pyrex dishes with a foil lid reheat well in the oven. They do need to be kept an eye on to make sure they aren't drying out, so you will need to stir every so often to stop the edges catching, and possibly add a little extra water. But it is more hands off than 4 pots on the hob, especially if you are doing breads and rice too.

Yes that’s true - add a little bit more water and again, keep the temp a bit lower (140 - 160 fan, I’d suggest) for longer so it doesn’t dry out.

I really fancy a curry dinner now! Will have to make one soon.
