I've got 1.5kg of sausagemeat

in the freezer, what can I do with it that isn't a sausage roll or stuffing?!

Can I just use it like pork mince? I'm fine for pork mince recipes, commented on the pork thread mince, but will it be too fatty? It's from the butcher with no label so not sure on fat content.

I think it would depend on what recipie for substituting for pork mince it's obviously a much finer grind.

Pork meatballs?
Pork burgers (with grated apple in?). Not sure about this one.
Mini meatballs into a pasta sauce or bake? I think there is a Jamie Oliver pasta bake recipie where you basically crumble sausages into a tomato-y sauce
It gets used for sausage rolls, stuffing and dimsum middles in this house.

Mix it with some stage and onion stuffing or similar, bake in a loaf tin = meat loaf, great hot or cold.

Maybe a kofta type thing- cooked on sticks with lots of herbs mixed in, served with pita breads and salad.

The meatball idea is a good one. I think it would work in lasagne too, maybe in place of mince like you suggested. Perhaps with lentils in too to soak up any fattiness?

Is it all frozen in one block? That's a pain if so!

I would be cooking it in patties with onion slices to eat in a morning roll om Saturday/Sunday morning

I have three boxes of Tesco sausage patties - absolute dupe for MCDs. Might have gone overboard at Christmas in the pork requirement.

I might just break it down into a ragu and freeze that off in portions.

You can slice frozen sausage meat with a big knife. Not easy but can be done.

I freeze chopped bacon in a tub and then slice it when I need some before defrosting.

It's not ideal but it's also not a disaster.

I think that anything which works with ground meat would be fine

How about Chinese recipes that ask for minced pork meat such as bao buns or dumplings. Or things like filled pasta. The meat will be seasoned to an extent but it's also close enough if you add the right ingredients to it.

Broken up cooked sausage makes a lovely pizza topping.
Ragu
With fried onion and baked beans in a cowboy pie.
I'd make some cooked stuffing balls too: sage and apple for pork, lemon and thyme for white fish, sage and onion for chicken, garlic and rosemary for lamb. For some reason stuffing can make a 20 minute cook of chops or chicken thighs feel like a full roast dinner midweek!

You can use it in a ragu alongside beef mince (50/50 mix) for things like spaghetti Bol and lasagne.

Right now I have in the oven, butternut squash, courgette, pepper, onion etc etc with chopped up sausages. You could use some of your sausage meat the same way. It is yuuuuummy.

I like to add pork mince to beef dishes to add moisture so homemade burgers/ meatballs are are 25 percent pork the rest beef.

Thaw it, mix it with breadcrumbs herbs and egg and shape into meatballs/rissoles for a tomato based sausage casserole. Then refreeze the cooked portions to serve with pasta or rice.

Add some herbs and make into meatballs, cook either frying or in a tomato base sauce and serve with puy lentils if using tinned lentils, otherwise bake together with the lentils as a casserole.

Add herbs, shape into balls and use as one of the sausage varieties in cassoulet.

Add herbs, shape into small balls, cook in a minestrone style vegetable and pasta soup.

I use sausage meat to make a sort of ragu, with tomato and courgette, then add a little crème fraiche and basil at the end. Yummy with any pasta.
