Gluten free bread recipes that don’t use substitutes?

I have coeliac disease and I don’t eat supermarket gluten free bread because I really don’t like the taste and, besides that, it doesn’t seem very good for you anyway (very, very processed). Plenty of other things to eat that aren’t “bread”.

But I was thinking maybe I’d start making my own occasionally, the odd time I miss bread.

I was wondering if anyone had any recipes that were naturally gluten free, rather than those using gluten free flour formulas? (I don’t like the taste of the gluten free flours very much either!)

The only thing I can think of would be a cornbread, though the texture is very different to a wheat bread and to me wouldn't be a substitute in many meals.

Unfortunately if you want a product which closely mimics 'normal' bread then these niche ingredients or highly processed substitutes and are required to try and get items without gluten to act like they do.

Can I ask, can you cope with soda bread?
There are lots of gf soda bread recipes.

I've got it into my head that the Chorleywood process of making mainstream bread more quickly was when many people started to become intolerant to gluten. It was too quick a process so the gluten didn't have time to mature and the yeast didn't have time to work it's magic.

No doubt someone will come along and say I'm talking bs but I'm minded of how Eastern European bread , made and baked more naturally, can be more digestible. They also make a lot of sourdough bread with is supposed to be kinder.

I never really had a problem with bread as I grew up as my parents bought our bread from continental delicatessens.

I really struggle with ' English ' bread. I also never eat ' fresh from the oven bread.' The results are very unpleasant.

I eat a low gluten diet for IBS, the only thing I find is actually 'bread' is spelt sourdough but this would be low gluten, not be gluten free so not suitable for people with coeliac disease.

Really sorry but I don't think you'll find a bread without gluten that has the taste or texture of bread.

I find the aftertaste of the Dove's flour isn't so noticeable with stronger flavours, like chocolate cake 😁. My favourite gf 'bread' is yogurt/gf flour pizza - I use Becky Excell's recipe.

Fellow coeliac who isn’t mad about supermarket bread. I make soda bread, or bread mixing gf flour and greek yoghurt, or flat breads (roti, naan) using Eurostar flour which is specifically for asian bread (just mix with water).

Almond flour bread isn’t bad. And as previous poster said, gf sodabread. I make red lentil flatbreads a lot, or use oatcakes. Supermarket gf bread is so overpriced and unpleasant.
