Veg Boxes: recipes that give each veg a chance to SHINE?

Do you have a special recipe that you think is the single best thing to do with a particular vegetable? - that shows it off best, & can't be made with anything else? And if possible is a focus dish, not a side thing?

Eg - every fennel bulb I get is turned into vonsudenfed's divine sharp chili (with an edge of caramel) spaghetti.

Every aubergine becomes Simon Hopkinson - scroll down's cumin-spiked silky lusciousness.

Sweet potatoes are cubed & slowly roasted in olive oil so they become marron glacés.

But what (do you think) is the single best thing to do with spaghetti squash? curly kale? white cabbage? parsnips? or other veg box items?

No answers Bink but.......Jerusalem artichokes??? Have two bags of the things in the back of the cupboard - have been there for three weeks. I've got a few recipes but really really can't face peeling the knobbly little blighters.

jerusalem artichokes make divine soup sphil, or you can make dauphinoise out of them. the guardian magazine had good recipes this week, here.

that the spaghetti gets a mention.

The riverford website has quite a few good veg recipes - they send one out with the boxes every week, and they've recently converted me to enjoying our farty artichoke friends like so. I've also done their baked kale with potatoes which we like. (I went to eat at the Riverford field kitchen, which was a masterclass in making vegetables taste amazing; I could have eaten a whole plate of their roasted beetroot with yoghurt dressing alone!)

Von- same here with the farty chokes, also have a lovely receipe of jerusalem artichokes and garlic soup if anyone wants it

Curly kale is my favourite veg!
Wash kale and slice very finely (make sure to remove the stalks as they are bitter). Peel potatoes and quarter them. Fry a finely sliced onion in a bit of butter, dont brown them! Place Curly Kale on top and potatoes on top of that. Lid on, let it simmer for 30 minues and mash with plenty of butter little milk. Serve with sausages and gravy.

Kale can also be used in oven dishes or makes a good soup

Parnsips: rosti, parnsip crisps, soup or roast them

White cabbage - make your own coleslaw

Squash - not too keen havent found a family proof pumpkin receipe

vonsf - we had the spaghetti again tonight & did some poncey raving about how it's a little differently delicious each time.

Airy wave to Bink I have to follow you around MN now that our dreamers' thread seems to have lost its momentum...

Roasted beetroot with yoghurt...mmm. And I love the sound of the sizzled sage artichoke recipe - might even be worth a marathon peeling session! We've only had a Riverford box for a few months so must have missed those two. We're planning to visit/eat at the farm during the Easter holidays.
