What can I bake to eat with Waitrose extra thick brandy cream?

I couldn't resist a pot of reduced extra thick brandy cream in the chiller section - it needs using very soon, so please help me not eat it out of the pot with a spoon!

What can I make for pudding tonight to use it up? So far all I've got is pancakes, and a vague idea of... sponge something.

Mince pies?
Or jam tarts as quicker!

Hmm, tarts might be an option... I've got some puff pastry and Ambrosia custard left over from NYE so I guess I could cobble together some quick custard tarts?

Use it to make truffles or cake pops. Yum!

Justbetweenus · 06/01/2023 18:05

Ginger cake. That would be delicious!

TwoMonthsOff · 06/01/2023 18:06

It will last longer than the date btw but how about a bought carrot cake, the flavours would go will with brandy (if you don’t want to cook anything)

Chocolate mug cake made in the microwave

I'd make a giant Yorkshire pud and drizzle a small amount of syrup over it then a good blob of cream.

Banana bread
Apple sponge (just core a couple of apples and whack a layer of Victoria sponge over the top)

NottanOtter · 06/01/2023 18:15

These are great ideas - thanks so much! Smile

Just eat it with a spoon.

That's the least calorific option.

Put it in coffee

It is absolutely fabulous

Bread and butter pudding - use up any mincemeat instead of adding raisins if you have any left over

What about mincemeat sponge pudding? www.greatbritishchefs.com/recipes/mincemeat-sponge-pudding-recipe

I bought this last year and got addicted to having it over strawberries and raspberries with dark chock grated or melted then drizzled over the top.

Also tinned pears the same as above with chopped nuts. Or with crushed hobnobs for a deconstructed pear tart type thing. Omg or with biscoff....

Just search your cupboards and fling anything that looks good in a bowl.

Pour over ice cream.

Combine with custard or yoghurt and fruit or fruit purée for a quick fruit fool.

Use in a trifle, maybe a Black Forest trifle.

Pour over pancakes, or scotch pancakes. If you've got left over blinis, briefly fry in butter, serve hot with cream and a drizzle of honey or maple syrup.

Eat with scones & jam.

Sophie Dahl's toffee apple and pear crumble. It's delicious hot or cold the next day. I made a huge one for Xmas and we were still eating it a week later. The crumble absorbed the liquid from the filling and the oats went soft instead of crunchy in the fridge but it was still delicious!

Straight out of the tub 😋
