Frozen cranberries - any ideas?

Didn't make the sauce in the end and DH bought a bloody kilo of the things!!

Are they nice just defrosted and eaten with yoghurt???

No, you actually can't eat them raw. You need to cook them.

I always have frozen cranberries in my freezer because I make cranberry orange muffins regularly. I love them! You could also make lemon cranberry.

And a cranberry cake is nice as well

I think they're a bit too sour just to have with yoghurt. I threw some into brownies the other day and also made a compote with some sugar, vanilla and orange juice which we will eat with pancakes/porridge etc

Orrrrr get some vodka and sugar, and make bottles of cranberry infused vodka..

Or make the sauce and put in hot sterilised jars, should keep for next year then! (Or use beforehand!)

Ok so you actually can eat them raw. I swear I read before you can't. But they're very bitter and not that nice apparently which is why most people say cooked.

So maybe add a few to smoothies? Or just make the cranberry sauce and freeze? Although you might as well just keep them in the freezer as is then.

You can also make dried sweetened cranberries by dehydrating them in your own and using some powdered sugar. Then you'd be able to eat them as a snack without the overly tart taste

I’d make cranberry sauce to have with roast chicken. I think it would also be nice with sausages and mash. We have leftover cranberry sauce with Boxing Day cold meats so I am sure you can use it as a chutney substitute year round.

I once made a cranberry-pecan upside down cake that was fabulous. Just use a recipe for pineapple upside down cake but use cranberries and pecans and lots of butter and brown sugar.

You can make chutney or add to beef or venison casseroles or to red cabbage or in stuffing

Just use then for cranberry sauce another time, if it's a chest freezer leave them there til next Christmas. No you can't just eat them with yoghurt, you wouldn't want to either.

Chuck them in gin/vodka/white rum with some sugar. Cocktails at yours.
Make a simple syrup with 50/50 water and sugar. Equal weight cranberries. Boil down until a glorious red colour, strain through a metal sieve and you have a cranberry syrup you can add to cocktails or soda water/lemonade or use as a squash. It’s delicious with lemon and mint or orange.
Cranberries have a lovely tart/dry taste which are a great alternative to sloes for gin.

They are delicious with roast duck along with thyme instead of sour cherries. Also venison (but I can’t bring myself to eat Bambi.) Basically all game. Also lamb.

Some great suggestions here thanks everyone. Love the idea of a syrup to add to drinks and also may try drying some. They are taking up too much space at the moment!

I make cranberry and orange sauce, use it at Christmas, then freeze the rest and use a jar as needed. Also I once made a sort of cranberry and a bit of sugar 5 minute 'jam' and used it with buttercream to decorate cup cakes.

I put them in everything - porridge, banana bread, meatballs to name a few. They give a good tang to balance out blander flavours.

Lovely with rhubarb and raspberries and orange in a fruit base for a crumble
for a twist use some vanilla or rose water in the fruit and sugar too

it’s lovely with a ground almond based crumble topping

also could make cranberry and apple sorbet which is delicious

also use they’re lovely cooked down with red cabbage and gherkins : this is lovely hot or cold with roast lamb / pork or cold cuts especially ham

Quarter of the packet in a pan with about 100g of sugar, and a splash of water. Bring to the boil, and simmer a few minutes.
Meanwhile slice 4 bananas and place, cut side down, in a baking dish (we use the thing I'd cook lasagna in). Dot with about 25g of butter. Pour cranberries over the top, and bake in the oven at 180 for 25-30 mins.
Serve as is, or with cream/icecream.
