Anyone made baked samosas?

I’d like to make samosas tomorrow but avoid deep frying. Wondering if anyone has tried baking them instead and did they turn out all right?

You can shallow fry and then bake

Or brush with oil and bake

TheGander · 01/01/2023 22:42

I’m trying to minimise oil so I’ll have a goat brushing and baking, thanks!

They're pretty good in an air fryer with just a very light spray of oil.
Obviously only useful if you already have an air fryer 😜

I'm interested in how you use the goat to brush it....😆

zeddybrek · 01/01/2023 23:06

To avoid frying I make them a bit different. I use ready rolled puff pastry. Spread the mix and roll up. Slice and lay flat and bake. A bit like cinnamon rolls. I got the recipe from Rooted in Spice on IG or YouTube. They turn out great every time.

I think I need one of these goats, I wonder what else they do 🤔

Amazing typo OP 😁

Meera Sodha has lots of recipes for baked samosas using filo pastry. I like the beetroot and feta ones best.

TheGander · 02/01/2023 08:24

Ooops the poor goat.

These sound great!

I always use filo and bake. As long as they are on non stick stuff, they work perfectly. I use Anjum Anand's pea and potato recipe.

Baldieheid · 02/01/2023 16:45

I've found they work perfectly brushed with oil and baked in my fan oven. Fav filling in this house is spinach and feta.

SummaLuvin · 02/01/2023 16:57

I have made filo baked ones multiple times, these are my all time favourites, and have been really happy with them. That being said I do tend to brush the filo with butter fairly liberally, so not a low fat option despite them not being fried.

I once made a traditional punjabi samosa dough which I brushed with oil and baked and felt it was a bit underwhelming and really suffered because of not being deep fried. So I would definitley recommend filo for baking.

Sumthingsweet · 02/01/2023 16:59

They come out great in the air fryer if you brush them with a little oil . Great you are making them from scratch , use to years ago but now just buy .

TheGander · 02/01/2023 19:53

So they came out ok but the pastry was a bit disappointing. I followed Madhur Jaffrey’s recipe but baked instead of deep frying. Pastry was a bit dry and tough but the filling was delicious. I think I’ll try filo pastry next time.

Lovely at least you can enjoy guilt free treat - I mean who does deep fry these days 🤷🏻‍♀️

Sumthingsweet · 02/01/2023 21:18

That’s an interesting recipe never had walnuts in samosas . So traditional Indian punjabi samosa either meat or veg I do like veg or chicken

Sumthingsweet · 02/01/2023 21:19

That’s it involve the animals , why should you do the hard Graft ! 😆

WinterDeWinter · 02/01/2023 21:21

Great thread.

I am here to shout that filo just isn't the same. It's lovely - but filo hasn't got the shortness which means it's not as crumbly and isn't as lovely

I know how to make proper samosa pastry but I don't have time. I really hope someone who is Indian/Pakistani origin will point me to a good readymade frozen alternative - I am in East London so I can get most things. Am open to readymade samosas too, but not keen on trans fats or modifiers.

Sumthingsweet · 02/01/2023 21:21

Instead of the goat doing the baking and brushing could we involve other house animals - I bet my cat could be nifty at the blender

WinterDeWinter · 02/01/2023 21:23

My dog would also be good at mixing (sorry for the hairs)

Sumthingsweet · 02/01/2023 21:23

Try any local Asian meat shop also in East London im Pakistani hubby Indian try

His Mums samosas
Nisas samosas
even Tesco have them in world foods freezer bit

declutteringmymind · 02/01/2023 21:28

Airfry them with some sprayed oil.
