Help re potatoes please

I have been asked to bring a potato dish , as well as other stuff for xmas lunch. It's a 45 minute drive so I have ruled out roast potatoes. Thought of a potato bake but someone is bring " hot potato salad" which is very much the same. SOmeone else is bringing a pumpkin and sweet potato salad .
WOuld swapping out to a different vegie be a problem? I was thinking of the Jamie Oliver 5 ingredient red cabbage but havent tried it. Any other suggestions. Lack of room in the oven is the problem so can't really do roasted brocolli or cauli etc.
Host is also doing peas.

Is it for actual Christmas lunch, or a lunch over Christmas? If the former, there needs to be roast potatoes. They can go in the oven while the turkey is out and resting for an hour. If random meal with potato, little boiled ones could be microwaved to reheat on arrival. Do not accept no roasted potatoes as a Christmas lunch option. I know there's a lot of fucked up vegetable behaviour on MN over Christmas, but I think that's a fairly standard food rule.

You can cook roast potatoes and then reheat them.
You can even re heat them in the microwave and then crisp up in the oven.

Oh dear. Yes it is for Xmas lunch. MIL insists there will be no room in the oven though as she is cooking 3 types of meat.

I thought about 3/4 cooking them and then finishing them there but as I say no oven space.

I would go for roasties- as they are so Christmasy! I know you say no oven space due to the meat- but could you encourage your sister to let the meat rest? She could wrap the meat in several layers of foil to keep it warm whilst you whack the potatoes in the oven? If you've pre parboiled them, and then got the oil really hot in the oven they should only take 25 minutes in the oven.

What's the point of getting everyone to bring a dish for Christmas if you can reheat in the oven? Turkeys need testing after cooking so the dust can be heated after the meat is out.

Ta , This sounds like a plan. We do have a reasonably large air fryer we could take along. Has anyone done roast potatoes in one of those?

Potatoes dauphinoise or potatoes boulangere would be my suggestion.

Reheated roast potatoes in an air fryer are great. Do that.

I was just reading down and going to suggest if you had an airfryer you could take that for roast potatoes, and then thought maybe that is a step too far.
Roasted potatoes are delicious in the air fryer - I prefer them.
