Desiccated coconut - what can I do with it?

I have been given a large bag of desiccated coconut (sweetened) and I wondered if anyone had some recipes that they recommend please?

I don’t mind if it’s sweet or savoury but just that they are fairly quick and easy and don’t need a huge list of ingredients.

I’d also like a muffin recipe that isn’t horrendously bad for you.

I use it to make coconut and blueberry loaf cake - I also use frozen blueberries for this as they are much cheaper. Recipe from BBC Good Food site

Bake a vanilla sponge cake, but add a tablespoon of coconut per egg. When it's done, spread jam on top and sprinkle thickly with coconut.

Any sponge cake recipe will do, but my favourite is the French style with yogurt and oil instead of butter.

Anzac biscuits use dedicated coconut.

Coconut cake. My mum used to make it. Not had it in years.

150g SR flour
150g butter or marge
150g sugar
75g coconut
tsp coconut essence or vanilla essence
3 eggs

seedless raspberry jam
50g coconut for dusting

Beat sugar and butter until pale and creamy. Add eggs and coconut essence and beat. Add flour and coconut. Mix. Put in a greased, lined loaf cake tin and cook at 175 for about 30-40 mins. Test with a skewer after 30 mins.

When cool, brush with melted seedless raspberry jam and sprinkle coconut on top.

Coconut pyramids - can't find recipe, but would mix the coconut with a tin of condensed milk until it is a thick dough. Then make pyramids with a couple of teaspoons each and place on rice paper on a baking sheet. Unfortunately I can't remember the temperature or how long to bake them. They are morish.

If the coconut wasn’t sweetened I would add it to breadcrumbs to cover chicken pieces with and make nuggets or katsu, actually if it isn’t overly sweet I would still give that a go!

Add to basmati rice with coriander to serve with curry

coconut rice pudding- I think a dash of rose water or a bit of cardamon would be a nice touch

Mix with condensed milk, a touch of coconut milk and freeze in lolly moulds, would be like a coconut mini milk

Thank you for this recipe - I saw some of this in a cafe the other day and thought it looked fabulous and meant to look one up.

'Cabana flapjacks' are a big favourite in this house (do you have to be of a certain age to get the cabana reference, I wonder?). Anyway, the quintessential MN flapjack recipe with coconut milk, chuck in some dessicated coconut and glace cherries with the oats before stirring in to the butter/sugar/condensed milk.

Yy, I use a tea infuser or filter to do similar, a small amount each time. Saves buying cocnut milk.

I make muffins

284 g plain flour + 3 level tsp baking powder
113 g caster sugar
113 g dessic.coconut
1 size 3 egg
1tsp vanilla extract
284 ml/1/2 pint milk
6 tablespoons veg oil
raspberry or strawberry jam

sift flour and baking powder into a bowl ,stir in sugar and coconut
beat the egg and wet ingredients together and add to dry ingredients
mix until smooth ,don't overmix

put 1 tbsp in muffin case ,add 1 tsp of jam ,1 tbsp mixture
cook 170 fan oven for 25/30 mins until well risen and firm .

Give white fish fillets (cos, haddock, pollack, doesn't matter) a thin coating of sweet chilli sauce, then 'bread' with the dessicated coconut. Put in the oven for ~15 minutes. Very tasty.
