What woukd you cook for a casual Saturday night dinner for 2?

I'm at an absolute loss. I used to entertain a lot, but that would usually have been for large groups including children.

Since I became single and DC grew up I barely cook anything these days, although I can cook and used to enjoy it.

This weekend I have a male friend coming here to eat before we go out to meet friends . It was a throw away invitation, he lives fairly nearby, he suggested he meets me here so we can share a cab, I said do you want to eat? Now I have to feed him!

It's not a date, I don't want it to feel like a date, but it is nice to have someone to cook for. I won't have loads of time for prep. What would you cook?

Lasagne salad garlic bread.
Risotto
Salmon and veg in foil.
Salmon,prawn creme fraiche taglietteli

@Georgyporky I've never spent hours making a curry unless it's slow cook. I often do it after work 45 min including prep for a veg curry and rice. Lasagne takes maybe 30 min to prep and45 In oven.

I wouldn't make anything too fancy as suggested by some posters, or it'll look too try hard and date like. Could you not just eat when out? Otherwise I'd do a pub grub style meal like pie and chips, chilli and pot wedges sort of thing.

Meat or veggie chilli with rice, salsa, sour cream etc

Salmon fillets ( or steak) - marinaded . Chuck some quality frozen chips in the oven. Make or buy any kind of salad ( coleslaw, green etc) . Fry the salmon or steak to be ready just the same time as the chips are ready and all done.
