Ricotta cheese - what can I make?

Morning everyone,

I was planning on making a cheese and tomato tart tonight for dinner but have realised the eggs are out of date. The ricotta cheese goes out of date today and I'm not sure I'll get out to the shop as I have a sick toddler. DH isn't back till after dinner time.
Does anyone have any nice recipes I can try with ricotta cheese? I have a puff pastry base, pasta, rice, parmesan, lots of veg / tomatoes / basil. No meat in, that's been eaten up!

(Didn't come from a cooking home and so have been trying lots of new things recently, hence why I'm asking for ideas! I'm not a natural cook lol)

How out of date are the eggs? They will be fine if a few days/a week out.

I expect the eggs will be OK, they last well beyond the date-stamp.

Eggs are 8 days after best before.
I might open them and see, I just didn't want to take any risks with them seeing as I'm 31 weeks pregnant! I've been looking at just doing the tart without the eggs, not sure how it'll affect the taste though.

Do the pastry (cut partly through around the edges so it puffs up), top with tomatoes, basil, ricotta, parmesan and olive oil. And olives/carers if you have them.

Could also slowly cook other veg on the hob/in the oven in olive oil, add a little balsamic and use that as a topping or a side. Loads of salad, etc, etc.

It'll be nicer in my opinion than any eggy stuff - lighter/fresher tasting, I'd describe it as.

A kind of carbonara with ricotta as the sauce? So onion, ham/bacon, mushrooms and ricotta stirred in.

@Doowop1919 If your eggs have been in the fridge, they'll last for ages (weeks) past their sell--by date.

To check if they're ok without opening them, fill a long glass with water, then put a whole egg in. If it sinks, it's still good, if it floats, it's bad. If it bobs in the middle it's on the turn but still ok to eat.

Sounds like witchcraft, but it works - something to do with the egg producing more air internally as it ages.

Yep, this is exactly what I do with eggs. We often have eggs from random neighbours which obviously don’t have use by dates on them and this hasn’t let us down.

I do the same egg test with water. I have chickens so we don't get a use by date!
