Flapjack / oat cookie recipes please

No allergies but would rather no nuts - suitable for a 5 yr old to eat please

flapjacks - dead easy.
4 oz butter
3 oz golden syrup
3 oz sugar (I usually reduce this a bit)
8 oz oats.
melt 1st 3 ingreds together (microwave or suacepan) and add oats. Bung in a tin (I use a oblong, about 8inch x 5) and cook at 160C for about 30 mins until just golden.
Don;t overcook, it goes hard.

Here's one for oat cookies:

200g Unsalted Butter, softened
100g Icing Sugar, sifted
1 tsp Vanilla extract
80g Porridge Oats
1/4 tsp Baking Powder
225g Plain Flour
Caster Sugar for sprinkling

  1. Beat the butter & sugar together in a large bowl until light and fluffy. Beat in the vanilla extract then stir in the oats.
  2. Sieve the baking powder and flour into the bowl then mix with your hands to make a slightly soft but not sticky dough.
  3. Shape the dough into a log about 7cm in diameter, then wrap thoroughly in cling film or greaseproof paper. Chill until firm, for at least 30mins
  4. Pre-heat the oven to 160 degrees c/325 degrees F/Gas mark 3
  5. Slice the log into rounds about 5mm thick, then arrange slightly apart on prepared baking trays.
  6. Sprinkle lightly with sugar and bake for 15-20 mins until golden around the edges.
  7. Allow to cool on the trays for 2mins then transfer to a wire rack. Store in an airtight container and eat within 5 days, or freeze for up to a month.

i make these which are similar to hobnobs.

8oz sr flour
8oz sugar
8oz porridge oats
8oz margarine/butter
1tbsp golden syrup
1tbsp hot water
1/2 tsp bic soda
mix flour, oats and sugar, melt marg/butter, syrup and water in a pan stir in bic soda and add to dry mix, mix well, make smallish balls and put on greased tray and flatten slightly with a fork, 180oc for 15 mins, cool on the tray, you just want them golden in oven not brown

Oaty Cherry Cookies
9 oz softened butter
2 oz castor sugar
3.5 oz light muscovado sugar
5.5 oz self-raising flour
8 oz porridge oats
7 oz glace cherries
2 oz raisins
Oven to 180C. Line 2 or 3 baking sheets with baking paper. (makes loads - or freeze half the mixture) Beat butter and sugars together until fluffy, stir in flour and oats, mix well. Roughly chop most of the cherries then add these, the whole cherries and raisins. Roughly shape into balls, and place on baking sheets allowing space to spread. Flatten slightly with fingers. Bake 15-20 mins,should still feel soft in the middle. Cool on the baking sheets for 5 mins, then transfer to wire rack. Yum. You can miss out the cherries and add more raisins / sultanas / choc chips or whatever...

I might try all of these... I am the worst flapjack maker in the world. The last lot came out as "ROCKjacks" and the previous ones were "FLATjacks"

this is my flapjack recipe.. I have a very good oatmeal cookie recipe but will need to look through my recipe folder... its a really good one... if anyone is interested.
