My dd used to hate any sort of fat in mash, I'd just not strain the potatoes tooo well and then mash thoroughly. By the time it's doused in lovely rich sauce from the casserole it's ok.

Make Potatoes Boulangere, a similar idea to Dauphinoise but made with stock. Vegetable stock from a cube or powder works well if you have no home made stock.
Just as impressive as Dauphinoise and goes beautifully with BB.
Cooks in the oven obviously, the timing isn't critical so it's a good dish if you're having guests. Delia has a recipe.

@Notsympatheticenough Most recipes for Potatoes Boulangere include thinly sliced onions gently fried to soften (not colour) them, then layered with the potatoes. But you may feel that the richness of the bourguignon doesn't need these additional onions. I make it with onions to go with things like boiled gammon joint or sausages, but without onion to go with more complex dishes.
If you've got time, peel and thinly slice the potatoes beforehand, and completely cover with cold water for half an hour or so before draining well and layering in a dish, this takes out some of the starch and keeps a nice texture to the potatoes.
