Please can you give me your best chilli con carne recipe. Something that will impress a crowd, quite a few who are foodies. I’m also doing a veggie chilli that I think will impress but need an
amazing meat recipe!

If you can afford it make the chilli with brisket or another cut of beef suitable for slow cooking instead of mince. There's a Jamie Oliver recipe in his America book which is very good and you can probably find it online.

The trick is lots of cumin and fresh coriander (among the other spices but cumin is what really gives it its zing).

I agree it's better with stewing beef than mince . That's thr trick really.

I also use stewing beef rather than mince and cut it into tiny pieces. It's more hassle but so much nicer.

For anyone who wants a super cheap version, at uni I made what I called 'poor mans chilli' it consisted of tins of whatever you could get, preferably sweetcorn, beans (baked), chopped tomatoes or chili tomato jar, diced onion and if you chose whatever meat you wanted ground or diced (I always diced bacon) I threw in any seasonings I could find always go for chili powder at least and then wash out and cook rice the cheapest you can find. I would always try to add in a spice to the rice and then instead of sourcream top with mayo or cheese.

Use stewing steak and cook slowly. With cinnamon, cumin, garlic, chipotle, paprika, tobasco with chipotle, dark chocolate and espresso coffee.

Jailhouse Chili

2 large onions, diced
6 cloves garlic, finely chopped
6 tbs olive oil
3 tbs chili powder
5 red jalapeños, finely chopped
1kg minced beef, 20% fat
500g stewing steak, cubed
6 rashers streaky bacon, diced and fried
2 tbs ground cumin
2 tbs oregano
1 tbs cayenne
1 tbs turmeric
500ml dark beer
500ml beef stock
3 x 400g cans chopped tomatoes
2 tsp garlic salt

In a large frying pan, saute onion and garlic in olive oil. After a few minutes add half the chili powder and half the diced jalapeños. Cook for a further 5 minutes. Add the onion mixture to a large casserole, leaving the oil in the pan.

In a mixing bowl, combine mince, chuck steak, fried bacon, the rest of the jalapeños and half the cumin, oregano, cayenne and turmeric. Mix well.

Brown the meat in 3 or 4 large clumps in the onion pan until brown on the outside. Don't worry about it not being cooked in the middle. Add this to the casserole.

Add the tomatoes, beef stock, half the beer and the second half of the cumin, oregano, cayenne and turmeric to the casserole.

Simmer on a very low heat for 1 hour.

Add second half of chili powder, the garlic salt and the rest of the beer. Simmer on a very low heat for another hour (or more) until the beef is cooked.

Serves 6 - 8.

Cut the liquids in half otherwise its very soupy, this is the best chilli I've ever had and the only positive thing that came from one of my exes 😅. Its honestly incredible 😍

Seeing the recipe, I can see I don't it to the letter - I just use dried chilli flakes, but I do use all the spices and herbs, coffee and molasses. I also cook the brisket in one piece then pull it apart with a couple of forks.

Adding fresh coriander as mentioned by a pp, plus cubed sweet potato made our chilli go from good to great.

We make a pumpkin chilli by adding fresh puréed pumpkin along with the tomatoes, it makes for a great base it’s so tasty and thick!

I actually prefer it with mince. Agree with cumin. I batch cook 4kg of mince. And lots of kidney beans. I always add one more tin of kidney beans than you think you need.

Our favourite chilli recipe is from The Hungry Student cookbook. We add peppers to up the veggies, and I have it with a baked sweet potato

I use my Mum's recipe:
Brown lean mince, add onions, chilli powder, cumin powder, smoked paprika and chopped red peppers, blitz up some sun-dried tomatoes in a little oil and add, add couple of tins chopped tomatoes, couple tins of kidney beans, stock cube and some dark chocolate and season and a tin of water. Pop in the oven on 170 for 3 hours add water if it needs it.

I always use minced beef, but I heard the stewing beef is better. I saute the onion, add the beef, salt, cook for a while, then add chopped tomatoes, red pepper and garlic. Then all the spices - black pepper, cumin, just a little cinnamon and oregano and chilli. At the end I add the kidney beans. I don't know where I got this recipe from but I like it:-)
