Pasta ideas with no sauces

Mimi124 · 16/11/2022 21:46

My DD hates sauces but she loves pasta. She can eat bowl fulls of pasta with grated cheese on top but as that's not the healthiest to have often I'm looking for new ideas on what to put on pasta.
We've tried a smithering of white sauce so it was coated and not too saucy but that was a no. She won't eat red sauces. I just can't think what else to put on it so its not dry.

Parmigiano cheese - grated, meant to say.

herbygarden · 16/11/2022 22:16

Is pesto a no go?! My kids love it and not really a sauce, even a little goes a long way in coating it all!

mydudero · 16/11/2022 22:20

Our DD loves the 1st pasta salad on this link. It's a kids recipe but I love it also, so simple yet lovely.

Haven't tried the 2nd recipe (and it does have cheese) but it also looks good.

You can make a dressing by adding olive oil, Parmesan, lemon juice, garlic and salt and pepper to a jar and shaking together. Then cook some broccoli (or any other veg, peas would also work) and mix it all up with cooked pasta and some more cheese. Delish!

Fried sage leaves in butter. It is the greatest pasta dish ever. Thank me later!

ODFOx · 16/11/2022 22:28

Fry off some halved cherry tomatoes (and sliced onions if liked) and some chopped garlic in more olive oil than you normally would until they're soft, stir through drained pasta and season. The pasta drinks up the oil so you end up with the tomatoes and onions but no sauce. Grate Parmesan over the top or just eat as it is. Delicious and really quick!

Beaten eggs with black pepper. Drain pasta put back in pan and add the egg mix until its scrambled on the pasta. That's a proper carbonate. I'm not a fan of tomato based sauces at all. Pepper sauce on pasta is quite nice too.

Dartmoorcheffy · 16/11/2022 22:36

Carbonara that should say

SheWoreYellow · 16/11/2022 22:38

Bit of butter or olive oil to make it less dry - but if she’s ok with it then don’t feel the need I guess?

Meatballs, either veggie or beef. Chopped cooked chicken.

shinynewapple22 · 16/11/2022 22:41

I don't see anything wrong with your DC having grated cheese on their pasta or why it would be unhealthy - protein, calcium. Just add some veg - either some peas/ broccoli or some chopped salad with it .

VinoDino · 16/11/2022 22:41

Any cooked pasta with a pesto or tiny bit of sauce, into the fridge and then reheated? So you get the flavoured pasta without the sauce, like leftovers. I made a pasta with truffle pesto and pasta water to make a sauce then the next again day it was 'dry' so just added Parmesan, IYSWIM.

Bacon lardons, mushrooms & courgette with a little olive oil

iveseenitinthemovies · 20/11/2022 21:29

I make this sauce

Grated courgette, mint and feta (the feta melts).

Roasted squash and goat’s cheese, with walnuts and chilli flakes if you like them.

Lemon, parmesan, black pepper and oil.

Olives, sundried tomatoes, oil, smoked mozzarella

Changechangychange · 20/11/2022 21:37

Oh, and any stuffed pasta is great with either oil or butter, and a bit of Parmesan and black pepper. Dice some raw tomatoes in if you like.

SkinnyFatte · 20/11/2022 21:38

Hot dog sausage or similar small cooked sausage and her choice of veg. Butter is a great idea.

Newusernameaug · 20/11/2022 21:42

Pasta, butter, garlic (either fresh or powder or both) and any mixed herbs, oregano, salt and pepper and then chilli flakes if they like heat.
I always add a bit of cooking liquid too.

it’s amazing and one of our favourite simple suppers.
I then add chopped crudités on the side or sometimes cook the pasta with some broccoli

Ohsugarhoneyicetea · 20/11/2022 22:08

Mine liked a bit of Philidelphia cream cheese on pasta, melts into pasta and makes it less dry. Or just plain olive oil is nice, or fresh basil pesto.

AdaColeman · 20/11/2022 22:46

Carbonara made with eggs and cubed pancetta (no cream or supermarket style white sauce) is quite dry, so worth trying. Serve with grated cheese.

A combination I often have is chopped uncooked tomato, chopped mozzarella, and baby spinach leaves or rocket. I just stir it into the drained pasta, so the leaves wilt and the cheese softens. A very quick and tasty dish.

Another favourite here is Pasta Primavera, which is any selection of green vegetables eg peas, broccoli florets, chopped green beans, spinach. Just lightly cook the vegetables such as microwave them, and stir into cooked drained pasta. You could cook the vegetables with a knob of butter.

If she will eat fish, you could try... flaked poached salmon or tinned tuna folded into buttery pasta.
Or get a pack of smoked trout flakes or offcuts of smoked salmon stirred into pasta. Or sardine with pasta. You could add a squeeze of lemon for some extra flavour.

When the boys aren't feeling sauces, we do a little unsalted butter, so the pasta isn't completely dry, with their favourite veggies (mostly broccoli, pepper and sweetcorn. What a combo but kids hey!). We may add a little ham or shredded chicken cooked with seasoning to get some more flavours in there, I'll pop a little garlic powder and pepper whilst cooking for some taste. And always cheese, they can't seem to go without cheese on top.

horseymum · 21/11/2022 10:57

Kale and chorizo, and canelini beans. It's a dry topping, can drizzle some olive oil and lemon juice for others.

kateandme · 21/11/2022 18:25

Could she do pesto.or dressings?
And what about straight mayo?tuna mayo pasta salad is always popular here.

JofraArchersFastestBall · 21/11/2022 18:38

This is lovely, and no sauce.

Spaghetti aglio e olio: while the spaghetti is cooking, heat some olive oil in a pan and when it’s hot, throw in a couple of cloves of crushed garlic. Swish it around and squish it into the oil, and then fish it out when it goes brown. Drain the spaghetti, and then while it is draining, throw a sliced red chilli or two into the hot oil. Take it off the heat, tip the pasta in and sloosh it around until all the oil and peppers are well mixed into the spaghetti. Serve in a bowl and grate fresh Parmesan on top. All quantities are variable according to taste.

This is my favourite pasta. Sometimes I have it with only garlic and extra virgin olive oil, sometimes I add some sun dried tomatoes and snow peas. With loads of freshly grated parmesan, it's food for the gods.😍

Look on the web for the Nigella Lawson LINGUINE WITH LEMON, GARLIC AND THYME MUSHROOMS.

It is really nice. We normally add more garlic because you can't have too much garlic. Also use a variety of different mushrooms for a change from time to time.
