Help - Boxing Day

I have the in-laws round on boxing which consists of MIL, DP's brother, fiance and 2 kids, and DP's other brother with his DP.

I need suggestions on what food to do.

Am i best to cook a couple of 1 pot meals - like Chicken Chassuer, Curry, Chilli etc and a massive bowl of rice and jacket potato's
or
Should i just go to Iceland or somehwere and get sheds loads of picky bits and bobs?

What would you do?

if you're likely to have a lot of left over turkey anyway, would be inclined to use it up with a big one pot meal rather than the chicken.

otherwise - depends how knackered you are going to be by Boxing Day.

I have in the past cooked a ham joint which takes very little preparation and then served it (either hot or cold) with leftover turkey, new potatoes or jacket potatoes, and salad. Add pickles,chutney,mustard and so on.

A couple of things to consider....how stressful/busy is your xmas day likely to be? I ask as the last 3 years, we have had family round on boxing day, and I have done both of your options....

I did a hot meal a few years ago, at 8 weeks pregant, when no one knew, and had to run to the toilet all the time to vomit....

Last year, I did a mix of forzen 'nibbles' from iceland and some homemade stuff......if you are likely to be busy/knackered etc, or find cooking stressful, i would go for the easier option

Don't don't cook on boxing day. Not ever! We always have cold stuff, ham, turkey nice cheeses. After xmas day I don't want to cook. And most of the time we don't want to eat much either, just pick at 'nice' things IYSWIM

Boxing day dinner in our house consists of cold ham, turkey, beef mashed spuds, salad, cheeses etc. I love it more than Xmas day dinner.

Cold spread.

Cold cuts of meat, potato salad, coleslaw, nibbles, mince pies, chocolates, nuts, fruit etc.

We are at mym mums for Xmas day so don't really have to worry about the tired factor - although it is DD's first Xmas and i would prefer to spend as much of it with her as possible rather than cooking!

Thanks for helping me decide Just got to break it to BIL now, he loves my cooking and was banking on it for Boxing day!

Glad this question was asked - we have been invited out for Christmas dinner (so no leftover turkey) but have family at our place on Boxing Day . Cold spread it is then, anything for an easy life! If they're lucky I might just stretch to making a trifle!

I would go for the first option - pots of hot stuff as the chances are they will have gone to a few parties and had picky bits there perhaps?

You could always have a nice hearty soup with a cold spread - buy some fresh stuff in advance and stick it in the freezer and pretend it's homemade, with some nice warm bread it can be really nice for zero effort

We ALWAYS have a cold spread. It is so yummy. The closest that I get to cooking is making bread sauce. Bread sauce, chutney, cranberry sauce etc., just what the doctor ordered on Boxing Day. We also keep some champers as well. Nothing beats it.

How about ham, baked potatoes, salads etc. Lots of chutneys etc. If you want to splash you can get a ham on the bone which looks good, but someone will have to carve. Also you can do as many/complicated or simple salads as you want, so if you are feeling crap you can keep it simple and vice versa.
