Baked Fillet of Sea Bass with Salsa Verdi

  • Baked Field Mushroom with Salsa Verdi {Vegitarian option} OR Asparagus Bearnaise with Toasted French Flute -"- Roasted Fillet of Beef in Herbs & Porcini wrapped in Prosciutto
  • Bell Peppers stuffed with Bobotie {veg option} Almond Potatoes

Peas with Spinach
Carrots in Orange

Sounds fantastic.
Personally I would do the vegi starter for all. Mushrooms go so well before beef. It would also save you having to time/think about 2 different starters.

it is being catered for a huge dinner for about 80 people

btw I am not paying either it is a work function

I just have to choose the menu along with DH

So the sea bass and mushroom actually come from a different option of menu iyswim

One of the guests said they don't like fish hence why the aspagagus

But we were told we could switch the courses around between menus

Yes - but it's a very filling combination!
Sea Bass is a firm 'meaty' fish.

Yes, agree, sea bass is a meaty fish, and also field mushrooms are very 'meaty', iyswim.

I would go for the asparagus option as I imagine it would be less filling.

Bloody hell I thought you were cooking this for a dinner party and I felt completely inept by comparison.

I wouldn't have sea bass before beef. Stick to asparagus and mushrooms before such a meaty main.

I have no idea what a toasted french flute is
but the asparagus sounds nice anyway.

Is there a vegetarian option for the pud? Marshmallow is usually not vegetarian.

DS1 is a qualified chef and says NEITHER as you would not be able to taste the full flavours of the beef after eating any of them. The startes are too stongly flavoured OR the beef dish is not robust enough.

Agree that seabass would be odd before the beef dish but think that asparagus would be good or the mushroom at a push.

It all sounds really over-flavoured and heavy to me.

Don't go for the Sea Bass - it will be frozen, and catered (ie mass cooked) frozen Sea Bass is disgusting.

Ask for a lighter menu.

Okay - here's my 2p worth. It's a very very corporate menu with the caterers going for panache over taste. Calling it a toasted French flute when it's a bit of bread is just one example of this. It's probably what corporate diners expect but, as a meal, it's not very appealing. IMO.
