You could do a basic madeira cake mix and add orange zest.

Should be fine to decorate. I use it as a standard birthday cake recipe which then gets covered in a layer of butter icing and fondant icing. Let me know if you need a list of the ingredients etc.

do i need beaters to make it - all belongings currently in storage including books - got a hand whisk wooden spoon and a bowl - could i do it with this - if you have got a tried and tested recipie i would be really grateful - feel a cow to ask so only if you have time - otherwise i can get one off the internet - thanks for answering was going to buy one but somehow feel the urge to make one for my lovely baby - i had big ideas of baking his first cake when i was in labour last year but despite having all the ingredients surprisingly this did not come to fruition!

No problem. It does suggest using a mixer but i only have a Braun hand held one and it turns out fine. I would have thought you coudl do it by hand too.

For 15 cm/6in square or 18cm/7in round tin

230g/8oz self raising flour
170g/6oz caster sugar
170g/6oz soft margarine
3 eggs
30ml/2tablespoon milk

Preheat oven to 150oc/300of/ gas 2
Sift flour into bowl then add the other ingredients.
Bind together on a slow speed then once combined increase speed and beat for a minute.
Spoon into prepared tin and smooth top.
Cook for 1 1/4 - 1 1/2 hours.
Press centre of cake lightly to test it. It should spring back and top be golden brown. to be sure insert a skewer. if it comes out clean cake is cooked.
Leave in tin for 5 minutes then turn out onto wire tray to cool.

You can add any of the following to the mixture to vary the flavour :
Zest of lemon or orange.
Teaspoon of almond essence.
60g/2 oz dessicated coconut.

I've made a lemon drizzle cake before but just subsituted the lemons for oranges. THat was yum.

Or you could make suzywongs brownies and use chocolate orange. OMG I'm dribbling as I type at the thought
