Vegan & GF "meatloaf": cheap, easy, storecupboard ingredients & can be done in SC

I just want to share this recipe as I've made it a few times and it's become something of a family favourite. I can't remember the site I originally saw it on but I've tweaked it slightly anyway.

INGREDIENTS
1 tin cooked green (puy) lentils (if you can get it with veg in it (I can here in DE) then do so, and you don't need the extra tin of veg)

1 tin mixed veg (or just carrots, or softened onions or basically anything you might have that needs using up - just make sure it's cooked and soft)

100g - 135g porrige oats (GF if needed)

3 tbsp nutritional yeast (optional! I always use it as I have a box sitting in the cupboard, so no idea how much of a difference it would make without)

1 tbsp soy sauce (or any alternative - eg marmite)

2 tbsp oil plus extra for drizzling

salt & pepper to taste

anything else you'd usually flavour your meatloaf with eg herbs, paprika etc

METHOD
Drain lentils & veg

Mix everything together in a large bowl and then squish it up with your hands so it's really well blended and you can't see individual lentils or the veg any more. Use 100g of oats, adding more if it's still too wet. It will be quite sticky though (much like actual meatloaf mixture).

Form into meatloaf shape or press firmly into a loaf tin (lined or lightly oiled).

Drizzle a little oil on top (helps with browning).

Bake in preheated oven at 180°C or (this will not be v. helpful I know) 2-3 hours in SC on high (I didn't make a note of exactly how long I had it in there for last time I did it in the SC).

Slice and serve eg gravy, mashed potatoes and some sort of veg on the side.
Keeps well, can be sliced thin and eaten cold next day in sandwiches (if this isn't something you'd usually do with meatloaf, it's sort of vaguely like corned beef).

I'd be happy to hear of any other similar meat-alternative meals. DH is vegetarian so we eat a lot of meat-free meals anyway, but with current food prices I'm having to really cut down even more.

This veggie lentil bake is a lot tastier than it looks and you can use whatever veg you might have in the bottom of the fridge, add/change the spices, it’s very adaptable. If it needs to be vegan you can just leave out the cheese.
