How can I cook all these stubbornly green pumpkins?

All my pumpkin vines have died off now, exposing about eight huge green monsters.
I took one away about a month ago, which has been basking in the sunlit window, assiduously turned every day… still green.

Has anyone any ideas/recipes/consolation for me, please? 🎃

Some pumpkins are meant to be green.

I'm not sure, no. DH planted them and lost/threw away the packet. 🙄

Any suggestions for using them?

If they're actually under ripe and not meant to be green- there are a few recipes for making "mock apple" from green pumpkin. This one is similar to what I used:

It kind of works... sort of. I would've used way more sugar or maple syrup etc. Under ripe pumpkin and apple aren't actually the same, but weirdly the texture when cooked is similar.

Maybe they are a green variety like Delica or Crown Prince? For eating I much prefer the green varieties, the flesh is dense and has much more flavour. I usually use a Japanese recipe for braising or a soup.

Roasted in chunks like potato.
Thinly sliced and stir fried.
In curries and stews.
Soup.

You could use them as a base for a chutney.
