How do you make your very best chicken skewers?

What chicken do you use?
How many pieces per skewer?
Do you marinate if so how?
What other bits do you add and in what size / quantities?

Is anything pre cooked or added to skewer and cooked in one?
How long do you cook in oven for?

Do you make any lovey healthy dip to go with it - if so recipe also please?

I'm thinking 3x chicken per skewer with mushroom onion or pepper. Is that op or am I missing something?

I always use chicken breast but that's because it's all my partner will eat. It depends on how long your skewers are really how much you put on but just make sure they're all the same size so they cook evenly. I have long metal skewers. I always marinade mine for at least a couple of hours. I cook on a rack in the oven for about 25 minutes but I do use a meat thermometer to make sure they're cooked through.

I do different types but here's a few ideas. For chicken tikka I marinade in yoghurt, lemon, garlic and tikka paste and I thread onto skewers with different colours of pepper and chunks of onion. I don't marinade the veg but I do toss in oil to prevent burning.

I do jerk chicken and pineapple ones with peppers too which I just marinade in jerk sauce.

Honey and mustard chicken, sausage and sweet potato always go down well here. Chunks of chicken breast, cocktail sausages and chunks of sweet potato that I usually parboil for about 8 minutes just to start them going. Thread on to pre-soaked wooden skewers. In a small bowl mix together a drizzle of olive oil, a good glug of runny honey and whole grain mustard and paint this on generously to the meat and potato before baking.
