Easy pescatarian meals

I am desperate to find pescatarian meals that are suitable for two adults, a teenager and a baby, tonight I cooked three different meals again and it's driving me nuts!
The catch is I have very little time to prepare and stand over anything as I have to be out of the house 4-5pm and need to feed the baby as soon as I get in. Any ideas would be very welcome!

Likes and dislikes?

I have a pescatarian and don’t find it too hard.

Things like pasta sauces & bakes, curries etc can be veggie anyway. If you have to add meat you can serve it separately e.g. grilled chicken.

For lots of chicken-based stuff I will substitute fish, usually salmon e.g. chicken stir fry - salmon or chicken nuggets - breaded fish nuggets.

Basically, any meat-eating members of the family just eat much less meat regularly.

Is everyone a pescatarian? If so that’s pretty easy - just pan fry, or bake cod/salmon/fish of your choice in loosely folded grease proof paper with lemon and herbs. Pierce some mimi potatoes and chuck in an air fryer with a grind of salt and a generous teaspoon of oil, steam some broccoli/veg of your choice. Otherwise do mostly vegetarian. Substitute chickpeas or lentils for chicken or been and just use any recipe you want. Or keep it simple - jacket potato or even some crusty bread with tuna mayo or beans or ratatouille. Fish finger sandwiches. Fish burgers using frozen breaded fish, and potato wedges with salad and coleslaw.

I regularly do this in ten minutes - you might need to fiddle a bit to get the beans to be a good cheat for mash. The herbs might be a bit too exciting for the kids. It works without.

Fish under the grill, any type, skin up so it's crispy.

Steamed brocolli and cauliflower or similar. Salt, pepper, lemon, to taste.

Can of cannalini beans warmed through with a heaped table spoon of tahini, oil to loosen, garlic, any fresh herbs, salt and pepper and lemon juice to taste, mash the lot up. Takes about five minutes.

Fish pie.
I use a pack of frozen fish pie mix (or 2 so I have leftovers), a couple of quartered hard boiled eggs, frozen peas and frozen chopped prawns (if I'm feeling flush.)
Add some instant parsley sauce. Cover with mash (instant if I'm feeling lazy)
Bake.

I do make a more complicated one including home made sauce when I can be bothered. Which is rarely.

Smoked fish risotto from bbc good food site. Delicious. I add extra veg such as peppers.

I take it that they don’t all have to contain fish. Some could be vegetarian, right?

Fish finger tacos
Omelettes
Cheat’s kedgeree
10 minute chickpea curry
Microwave risotto
Quick lentil bolognese
Tomato gnocchi
Salmon fried rice
Tuna pasta

Likes and dislikes; baby won't eat eggs, teen won't eat risotto, cabbage or mushrooms (unless they are not recognisably mushrooms) neither will eat salad. I don't eat prawns. We love spicy things, but obviously that is not ideal for baby. Very happy to eat mostly vegetarian!

One pot meals or things I can batch cook to reheat are probably best, I have time earlier in the day to prepare stuff and I think saving a portion of the previous nights dinner to reheat for the baby might be the most efficient way of doing things?

Things I currently make that we like and are easy:
Red lentil dal
Vegetarian Ragu (mushrooms and lentils)
Tuna and butterbean bake
Black bean fajitas
Ratatouille
Jacket potatoes with beans and cheese
Cannellini bean and red pepper stew
Chickpea curry
Fish pie

Fillets of cod (I use frozen and it works fine) marinade in yoghurt mixed with lemon juice and a curry paste of choice. (You can do this the night before or first thing in the morning). When you are ready to cook it put the oven for 15 minutes then remove, spread a dollop of mango chutney on the top of each fillet and grill under the tops are caramelised. Serve with tender stem broccoli and rice.

Quick fish cakes with leftover mash and tinned fish, dipped in flour, egg and breadcrumbs if you're feeling fancy, served with veg.

FIsh tacos - whiz up white fish, lime zest, small red chilli pepper, chopped coriander, and salt. Make into loose fishcakes and let rest 20 minute while you assemble other fixings like guacamole, chopped red onion and tomato salsa, shedded lettuce, sour cream... basically whatever you like in a taco. Fry the fishcakes carefully - they are pretty fragile - for 3 minutes each side and serve.

Fish chowder and sourdough toasts - shallot, celery and diced potato cooked out in the saucepan, add fish stock and simmer untill spuds are soft. TIp in frozen fish pie/seafood mix and heat through until cooked (usually only a few minutes and swirl through some yogurt or sour cream. Taste, as a dash of lemon if needed.
