veggies in the fridge drawer

This is really basic, I know, but I'm useless at cooking!

I have just sorted out my fridge and found lots of vegetables in the drawers that are out of date and I wouldn't want to eat as they are but not mouldy.What is the best thing to do with them? I have:

celery
brocolli
cauliflower
2 x red chillies
potatoes
carrots
courgette
green pepper

Do I just bung them in a big pan and boil them up for stock??

If they are not mouldy/yellowed/shrivelled they can be eaten. Dates are only a guide - actual ediblity depends on so many factors - how old before delivery to store, what conditions and temps kept at all along the line. You have to learn to recognise when a thing is edible, not follow a number that may or may not be relevant.

You could make a soup that uses up the whole lot and freeze any soup you don't eat in the next couple of days.

I pay no attention to dates on fruit and veg. If they look good to eat (no mould and not shrivelled) then I use them

Depending on quantity I’d probably split the veg into two and make half into soup and half into a vegetable curry, adding anything else I have in my store cupboard.

Soup is a great idea - you could make more than one kind with that lot (plus a couple more ingredients)
You shouldn’t keep spuds in the fridge though.

I'd make soup, or risotto, or stir fry rice. Or add mince and make it into bolognese. Store for spag Bol or lasagne.

Don't waste them making stock.

Cauliflower, broccoli, chili and potato will make a great Aloo Gobi style curry.

Potatoes don't freeze well, so you will need to eat that sooner

The rest with some lentils, seasoning of your choice, like dried herbs, paprika etc will make a good thick stew which will be perfectly happy being frozen. If you have a slow cooker, that would be great.
I have something similar in the slow cooker right now, celery, carrot, onion, leek, green lentils and vegetarian sausage, with German inspired seasoning of herbs, celery seed, caraway seed, nutmeg and lots of black pepper.

Why wouldn't you just use them as part of your normal meals? They won't taste any different. If you can't think of a specific use, make a soup.
The dates are irrelevant, a lot of supermarkets are doing away with dates on fruit and veg because people are just chucking perfectly good food away because it is "out of date".

Any cabbage types, including cauliflower, are unsuitable for stock (broccoli and carrots are great, as are onions.) Agree with pp on stew or curry, or break the cauliflower into florets and roast in the oven. Definitely don't thrown them away just bc they're no longer good for eating raw.

dpending on the amounts make a lovely big casserole. All those make great flavours for casserole or stews.do you have other pantry staples?
they also would make a fab curry.
the cauliflower and broccoli would make a great cauliflower and broccoli cheese

A Veggie chilli with the Chillis, carrots, courgette and pepper - chuck in a can of kidney beans, some cumin, chilli, stock cub, pepper, tomato puree .

Ignore the dates. If they're not mouldy or rotten you can still eat them! Even if they're going a bit soft. Best thing is soup. Boil it up and blend it.
Or just eat them with your normal meals - mash, roasted veg, etc.

Potato, courgette, broccoli and cauliflower I would put together into a soup with some leeks/onion and a bit of Cheddar cheese. Blend into a smooth soup. The green pepper, carrot and chilli could be used in a stir fry.

As others say use them in your normal cooking.

Also don't keep raw potato's in the fridge - store them in a black bag somewhere cool & dark.
