vegetarian christmas lunch ideas please

Does anyone have any inspiration? I always do the same thing (nutty stilton and mushroom pie)and this year I would like to do something different. It should amaze and impress and satisfy carnivores too. I always do traditional Christmassy trimmings so this would be instead of the turkey. Ideas gratefully received!

There was a lovely recipe in Sainsbobs magazine for roasted vegetable tart, I will have a look when I get home and post again.

PS have you done chestnut stuffing - that always goes down well with veggies.

Why don't you just make LOADS of different amazing veg dishes and forget about trying to replace the turkey.

Do different and scrummy veg dishes like a sweet potato, parsnip, swed and carrot mash.

Gary Rhodes does amazing horseraddish dumplings.

Spring greens, spinach and peas.

roast potaoes with ginger and garlic

new potatoes

Roast root veggies

Cauliflower cheese & leeks

Buttered, sugared carrots and some roast carrots

peas and sp[roputs with mutard seeds

cabbage and garlic and olive oil.

I am searching for one too Hobnob. I had the most amazing vegetable ring, but I can't find the recipe. I will look tonight agin.

It was a kind of stuffing mixture made from finely chopped leeks and shallotts sweated with garlic, then chestnuts and breadcrumbs and fresh cranberries. Left to cool and mixed with an egg (I am trying to remember all the ingrediants). Then you butted a ring mold, put half the mix in and squidge down. Chop up some gosts cheese (no rind stuff) and sprinkle lumps over, then add rest of mix.

Bake until firm (I think about 40 mns at 200 ish)

Unmould and put onto a baking tray. Get a pack of puff pastry and cut out long thing strips. Lace these around the ring, kind of like a lattice effect. I think it then suggested making holly leaves of pastry too and decorating with these.

Do all this a day before.

On the day brush with beaten egg and cook about 190 or 5 until hot/golden etc. Attempt to move onto serving platter and decorate with more fresh cranberries.

If I can find the recipe I will, as this is sooo yummy and is great cold the next day too. Problem is it is big and serves about 6 - 8, I am the only veggie!! Although the meat eaters do like it too.
