Left over pork.....any ideas?

Hi, don't think i have ventured on this thread before! I am not particularly good in the kitchen, although i do try!
Anyone got any ideas of things i can do with left over roast pork, i am fed up just giving it to the dog and thought i might be able to get another meal out of it for dh??

You could chop it into small bits and make pork fried rice? Just boil your rice, fry some onion and mushrooms, and fry it all together with an egg and add the pork in at the end - few shakes of soy sauce and you're done!

I would stir fry it with some veg and a chinese sauce, or use it to make some kind of japanese noodle soup.

Or reheat it in a pan with some cream and mustard and serve with mash and cabbage.

chop & chuck in a caserole with onions carrots, swede and anything else you fancy. add a bit of liquid/stock, cover and chuck in the oven for 1 1/2 hours on 180. Add some flour and some gravy browning then put back in for 1/2 hour. - serve with mash and green beans.

I have the same problem! Was thinking of doing some red cabbage to go with it - looked up pork and red cabbage on bbc website and found a couple of easy recipes for braised / pickled red cabbage. It feels like a nice wintery type food to do!

Also can't go wrong with a bit of sweet and sour sauce, veg, noodles and beansprouts stir fry.

If you don't want to eat it cold with salad, turn it into a stir fry. Much of the point of having a Sunday roast is to have left overs for one or more meals during the week: e.g. chicken hot Sunday, cold Monday, risotto, Tuesday/pork hot Sunday, cold Monday, stir fry (or some other vaguely chinese dish) Tuesday/ beef or lamb, cold Monday, shepherd's pie or fake moussaka Tuesday etc etc.

I would def. go the red cabbage route - just chuck the diced leftover pork in withthe cabbage and braise for 2 hours. You can add apple, onion,sugar,vinegar etc if you like. I think my fav. veg is red cabage!

If i was putting the pork in with the red cabbage, would i just put them in a casserole together and just add as much apple, onion, sugar vinegar as i think it needs and then leave for a couple of hours?? I like the sound of that and serving it with mash maybe....nice and easy, and abit different.

yeah casserole or I would do it on the hob. Just cover with a lid and stir every so often. V easy.

Ah, brilliant thanks will be checking in on this thread more often now, not as scarey this food thread as i thought! LyraST that sounds really easy aswell, definatley a good one to try!
