Hel! Can silverside beef make a good roast?

Have guests coming for dinner today and have put the roast beef on but just read the packaging which says ideal for pot roasting- will it still come out ago if I roast it conventionally with roast pots and parsnips in the oven or will it be tough and chewy?

I think it's a bit tougher than the usual roasting joint.

It is a silverside joint, from the Waitrose Hereford range.

Shall I cook it a bit longer then? Or will that make it dry and flaky?

Why don't you throw a couple of glasses of red wine in the bottom of the roasting tray and cover the lot in tin foil. Do the veg seperately.

My mum always used to pot-roast silverside in beer. She put the root veg in with it. It was v tasty. My Jewish MIL does something similar. If you've time, I think it needs a longish simmer in liquid to tenderise it.

I pot-roasted a silverside joint on Christmas Eve and I cooked it in cider! It was LOVELY!!

YOu could do something like this pot roast in red winte a la Delia. I wouldn't roast it as it can be dry and tough.

Roastlng longer will make it tougher. I often pot roast beef and then serve it in slices with the juices as gravy. Cooked in beer is my favourite though I expect red wine would be good too.
