What have you done with your bumper crop of apples?

Blatantly stealing ideas thread!

We've had a very generous crop of apples this year on our tree and so far we have; given bags and boxes of them away, made apple crumble, made Dorset apple traybake which is absolutely delicious, made French apple cake, made apple juice.

We are still drowning in them and there are plans for dh to make cider and I was thinking of making jam or chutney.

Can anyone recommend a tried and tested recipe for a good jam or chutney please?

What have you done to manage the abundance of this year's crop?

Mine isn’t very inspiring unfortunately but I usually peel and cook them all down and pop them into separate bags for the freezer and when I fancy a pie, crumble or apple sauce I defrost and it’s ready to go! This year though the wasps got to my apples before we did and ate the lot ( I think it was due to it being a hot summer )

That’s actually really helpful as there are so many this year. Going to do some apple picking at the weekend.

i have made masses of chutney this year. The best had apples, sultanas, loads of garlic, grated fresh ginger, star anise, Szechuan peppercorns, chilli and black pepper, then vinegar and brown sugar. I made that one in august with the first windfalls and tried it the other day, it was excellent.

sorry no quantities, I do it by feel.

I tried sage and apple chutney and it was decidedly meh, despite masses of sage added, dried and fresh.

I’ve made stewed apples which I had with cinnamon in porridge.

I've made chewy apple rings in the oven. I've also used a lot in our juicer with other fruit to make fresh drinks.

I make Nigella's Christmas chutney then hand it out to people at work - I even get personalised stickers printed. They all think I'm a great person but really I'm just trying to get rid of my manky apples 🍏

Last year I made lots of apple sauce. This year the tree has not produced much at all. I blame the bamboo next to it. The bamboo is going to be scalped at the roots

I've made gallons of compote and jelly. Lovely on yoghurt and porridge, blobs in gravy, cake filling, pastries, and in Prosecco.

Your Dorset apple tray bake sounds lovely - have you a recipe for that?

I do crumbles and cakes mostly, and a huge vat of chutney. It's in the style of mango chutney so withnspices, tonnes of ginger etc. I just google mango chutney recipes then freestyle it!

I do also store my apples use them for months.

This one is also good www.cottagesmallholder.com/no-cook-apple-date-and-onion-recipe-79/ . It says no cook but I normally cook it, I've found it only works as no cook if you mince the onions very finely and use cooking apples that cook to mush (rather eating apples or cooking apples that keep their shape).

I also oven dry apple slices - it takes about 8 hours at 70 C.

This mincemeat is good too www.rivercottage.net/recipes/apple-ginger-and-pear-mincemeat . It's quite low sugar / fat though so needs a bit more care preserving if not eating within a few weeks. I had a jar go mouldy years ago and explode so now process my jars along these lines www.kilnerjar.co.uk/making-your-first-preserve (I've stored for 2 plus years since doing this and it's been fine).

Add apple purée to oats then bake for 40 mins, add dried fruit/nuts to make granola for breakfast.

Mincemeat and chutneys. We have stored a lot in the shed and hope they don't go off.

I've made a few jars of apple sauce for when we have pork roasts and we stir it in to porridge as well.

Also homemade coleslaw with chunks of apple added is lovely.

Apple sauce (in jars and also freezer bags)
DH makes chutney
Peel, core and cut into segments then freeze on trays before bagging in freezer - good for crumbles, cakes, pies etc in the future
Keep quite a few in the fridge for weeks for general eating

A bit like an Apple jam but not as thick. It's great on toast and stirred into porridge. Also mixed a bit into some flapjacks and that was tasty too.

Really surprised how nice it is. I've frozen a few jars and given some away, it made plenty

Just finished watching Strictly, so I'm off to make some apple jam and stew some to freeze. So Rock and Roll!

I've not made chutney before so I might try that tomorrow. Thanks for the ideas and links.

@TheSpottedZebra The Dorset apple traybake is actually one I found on Mumsnet and it's on the BBC Goodfood page. Lovely hot with custard or cold.
