Frozen veg to make veg soup yeah or nay?

Maybe a silly question.

Does it make much difference to the taste?

I'm sick of chopping veg for soup already. Our regular soup is carrots, leeks, celery, onion and chickpeas. I like it chunky, more like a broth.

I don't mind using frozen peas/spinach in cooking but did not have much success with frozen carrots, broccoli etc in the past they all ended up watery

I just roughly hack up fresh veg, blend a bit when cooked and then add the chickpeas

I use frozen Its a bit softer though

TooBigForMyBoots · 01/10/2022 19:03

M&S do a frozen soffrito. I use that.

I'm experimenting with frozen atm. Been fine so far, I think frozen is much better than it used to be.

You can also buy frozen chopped garlic and ginger, absolute game changer.

I always blend mine until its smooth. A friend was head chef at a very posh golf club and always used frozen veg to make soup, adding a swirl of cream and some croutons to make it look fancy.

@DoodlePug I use frozen chopped onions and ginger. You are right, game changers. Haven't tried the garlic as I like fresh garlic crushed and thought the frozen one might be like the frozen ginger?

Thanks all. Mentioned using frozen veg to DH just now and he says absolutely not, it wouldn't be the same. I'm still tempted to try it though.

@Greengr that might just be the method for me.

if I make roasted squash and sweet potato soup I just roast the veg in the oven, leave it to cool and then scrape out the flesh from the skins. It's so handy.

Frozen veg is fine. I always have frozen garlic, herbs, spinach and cauliflower in the freezer.

JudgeRindersMinder · 01/10/2022 19:45

Frozen veg is generally fresher than non frozen because it’s frozen pretty much as soon as it’s picked.
I always have bags of carrots, squash, sweet potatoes, leeks, onions and peppers in the freezer.
Life’s too short to chop piles of veg when you’re away to boil it into oblivion in soup!

Greengr · 01/10/2022 19:59

With squash and sweet potato I just wash them, then roast and blend with skins on
Also wrap a garlic bulb in foil, roast, squeeze then add to soup
Amazing !

Frozen veg is more expensive !

Sigma33 · 01/10/2022 20:02

No, because soup is away of using up fresh veg that is getting passed its best 😁

QueenLagertha · 01/10/2022 20:07

@Greengr I am so going to try that with the garlic bulb. I just checked the price of frozen veg. Very expensive you are right.

I use frozen veg in mine! I have bags of ready chopped courgette, butternut squash, pumpkin etc in my freezer - basically anything that we have had a glut of in the garden.

Frozen veg is more expensive !

I think it can be a negligible difference as there no waste with frozen…and if it’s not it’s worthwhile to me for the convenience of being able to make a pot In the pressure cooker in 20 minutes
