Anti-inflammatory diet ideas

At moment I'm trying to eliminate carbs and processed food to see if it helps anti-inflammatory wise. I'm not particularly wanting to lose weight but want to keep it fairly healthy - definitely don't want to go down the hight fat/keto/Atkins route.

I'm sick of eating fish or chicken every night with veg or salad but can admit I'm no cook!
If anyone has any advice on anti-inflammatory diets and/or recipes, I'd be very grateful to hear from you

The best thing you can do to remove inflammatory ingredients from your diet is to eliminate vegetable and seed oils. Things like canola oil, rapeseed oil, sunflower oil, soybean oil, etc. They are highly processed and hugely toxic to the body and really do cause inflammation. I steer we'll clear of carbs, sugar and the oil types above and if there is an instance where I accidentally eat vegetable oils (unknowingly at a restaurant) I can really feel it in my joints the next day. Just have a quick google of 'vegetable oils toxic' and lots will pop up.

Also keep away from processed foods, sugar and carbs

Some good ideas here www.olivemagazine.com/recipes/collection/anti-inflammatory-recipes/ - although the first few are indeed salmon and veg!
Burnt aubergine chilli - full of all the anti-inflammatory stuff: pulses, tomatoes, spices, onion, dark chocolate. Serve with sweet potatoes and a bit of avocado.
Coconut oil is fine. I use it in this gorgeous traybake

@Hanszimmerframe I’m interested, but handicapped by a lousy digestion, fussy husband, and don’t like to eat much meat.
So olive oil is okay? What about walnut oil?

Yes. Off the top of my head the oils that are good to eat are things like:

Olive oils (extra virgin & cold pressed is best), but not cooked at a high heat because it has a low smoking point

Avocado, macadamia nut, coconut oil is suitable for cooking. Ghee is also very good. I use these all and they're great.

I would say though that if you're making a decision (and let's face it - an investment in new oils) then you want to make sure to stay away from the bad oils which are found in so much stuff now. Things like mayo, cakes, etc. I always read the labels!
