'Boxing day' buffet. Ideas needed

Party for Dad's 80th. Having a boxing day style cold buffet as Christmas dinner is his fav.

Need some ideas other than ham, turkey and salad. Particularly some veggie ideas. Worried turkey may be bland so any really tasty ideas would be great. Cheese based?

We can heat a few things up but most will be cold.

My Boxing Day buffets feature lots of cheeses, pates, various breads and crackers, cold meat pies, whole dressed salmon, cold cuts of turkey and pork, salami and chorizo platter, salads, fruit platter, pickles and chutneys, various olives, buttered new potatoes...it's my favourite meal of the year

For a large number, you need things that aren't too fiddly and can be easily made on a large scale (stating the obvious some will say but I have learnt that the hard way!)

You could cook a couple of turkeys, remove all the meat from the bone, chop into small chunks and make a 'Coronation Turkey' (like this ). Will make the turkey go further than sliced, can be made ahead. won't be dry, and can be eaten with a fork.

Tons of sticky sausages for example.

Coleslaw using shredded sprouts instead of cabbage.

I was going to suggest prawn cocktail but that Will be pricey for a lot of people. I had one in a restaurant once which had small cubes of melon added and it was delicious and would keep the cost down.

Cheese and pate are Christmas staples, and are great 'fillers'. You could serve with slices of baguette as well as crackers.

Good idea to have the birthday cakes as dessert. You could buy a couple of those big round tubs of chocolates to put on the table alongside the cakes as they seem to be a Christmas 'thing' (although I think the boxes often work out cheaper)

Big boxes of Quality Street etc are a great idea!

I'm going to do a couple of cranberry and camembert puff pastry tarts topped with walnuts (large one sliced up rather than dinky ones). A large vegan butternut and beetroot terrine in a Bundt tin (pray it works! Can't practise one as no one in this family would eat it). Plus lots of extra bits people came up with. Making suggestions to my sister too. Thanks so much 🙏.
