What to cook with one limb

What can I cook with one arm, whilst the other is immobilised? Has anyone been in this situation? How did you cope? Any tips or ideas welcome. Ds would love pizza daily but I'd hate it. And my weight has already shit up in ten days, from the lack of activity. Feeding 3-4.

Normally happy with stir fry's, Mediterranean meals, lots of veg, fish and chicken, some pulses and whole grains.

Thank you.

Risotto.

paintitallover · 27/09/2022 21:30

That's a good one! Thanks.

I forgot to say, I have one of these, although it's hopeless for carrots www.dunelm.com/product/oxo-softworks-vegetable-chopper-1000115534

And. Magimix for grating , which I might be able to use.

Also my energy levels aren't great right now, so 30 minutes is enough.

Buy some ready prepped veg for roasting (squash, sweet potato, courgette ) peppers are easy to chop/crush with one hand.
prepped salad bowl from supermarket or bag of leaves.
jar of feta in oil
olives in oil
Nice loaf of bread?

Duplocrocodile · 27/09/2022 21:35

Ready chopped chicken breast
jar of curry sauce (empty these 2 into saucepan or slow cooker in morning)
microwAve rice

How old are the other 3-4 you're feeding. Surely they can hold a pan / tray whatever while you stir unless they're toddlers.

UpdateStoleMyProfile · 27/09/2022 21:50

How old are the others and what cooking equipment do you have?

I would be inclined to go for small potatoes, easily chopped veg (courgettes and peppers), ready peeled garlic, etc, all dumped in a tray with chicken thighs, cherry tomatoes, whatever else you have. Drizzle of oil and a scatter of salt and roast.

don’t carry the heavy hot tray single handed - pull the oven rack out slightly so you can serve directly from the tray with a ladle or fish slice with each eater holding a plate up for you.

fresh stuffed pasta, drain, serve with butter and ready grated cheese, and a bag of ready made salad.

rice - microwave packet particularly easy. Salmon steaks. Green beans. And sauce.

If you have a slow cooker then a packet of frozen casserole veg, a pack of diced meat of choice, stock, tinned tomatoes, herbs. And potatoes in the oven.

jacket potatoes and get everyone to sort their own toppings - baked beans, grated cheese, tuna mayo, sweetcorn, lettuce, whatever else works for you.

If you like stir fry then easiest way to go it one handed is to use packet of stir fry veg, packet of sauce, ready cooked prawns and a handful of cashew nuts, with noodles or rice whichever you prefer.

Some fantastic ideas. Thank you all. Where do you buy ready chipped veg other than onions? We have tesco, also and Sainsburys near to us. Aldi don't deliver.

The two "kids" are young adults. One is full time at work and doing a really heavy course. The other works long shifts. DH away all week days, but from Friday.this week. So help can be patchy, and I'd rather they managed the dishwasher and the bins etc, when they're around.

Just buy carrot sticks and cook them or serve with hummus. Broccoli and cauliflower you can buy in ready to steam bags.

For your mental health, look at extra exercise you can do with one arm too.

UniversalTruth · 27/09/2022 22:23

Just seen your update: young adults can help out with veg prep for the time being surely! Takes 2 minutes to peel some carrots and put in water or in the fridge.

paintitallover · 28/09/2022 07:08

Probably true. Just impossible to get hold of them when they're needed. I'll have to plan better. Thank you for the extra suggestions.

I’ve seen chopped peppers, butternut squash, chopped Mediterranean veg all in Sainsburys frozen, M&S and Waitrose do loads more chopped veg fresh in little trays you can microwave, expensive but really handy for this - they do chopped leeks or peas and chopped green beans and again the mix of chopped aubergine, courgette and peppers etc - I’d hit up Waitrose and M&S if you can and check out their fresh and frozen range of pre-prepared stuff

Thank you. That's such a good tip, from several of you. I did an online shop this morning and bought tons of frozen veg. It was a revelation! I normally just get spinach, broad beans, peas and edamame. What a lot of choice these days. Feeling much more prepped.

Risotto.

How is this possible with one arm? You have to stir constantly, which involves holding the pan steady with one hand and stirring with the other.

There are some baked risotto recipes which I assume don’t need the stirring. No idea if they’re otherwise low effort

What I'm finding is that using a heavy pan helps a lot, as things don't shift around. I couldn't lift them up before or after, though.
