Nigella's brownie recipes in Domestic Goddess book

Is it just me, or do these brownies take almost double the allotted time to cook? They taste delish but no way do they cook in 25 mins. I would have had to spoon them out of the tin, even allowing for the 'standing and continuing to cook while cooling' time. Its not surprising as there is so little flour to bind the mixture but I really wonder if anyone has ever had success with the timings she gives

Opinions Oh Wise Ones?

I always put my extended cooking time down to my shite terribley old fashioned RAF gas bottle cooker. They are lovely brownies though!

oxocube · 24/01/2008 20:38

NB - after about 40 mins, mine are just right - still very fudgy and sticky in the centre but not liquid like after the 25 mins she recommends.

My copies of both How To Eat and Domestic Goddess are littered with annotations and improvements.
Her books make great reading but compared to someone as anal as Delia they can be a bit sketchy to cook from.

RubySlippers · 24/01/2008 20:41

thought it was my dodgy oven too

they are fab brownies IMO

andiemustlosehalfastonemore · 24/01/2008 20:41

me too first time I made them they were liquid!

janeite · 24/01/2008 20:42

I made the brownies once and they were an unmitigated disaster - we would have needed to drink them and even after twice as long, they still weren't right. Her flpajacks were vile too. It makes me very wary of trying out any of her recipes unless I know somebody else has had a success first.

PaulaYatesBiggestFan · 24/01/2008 20:42

yes - i was thinking before i pulled this up 'sloppy'

TRULY the most delicious brownies ever would deffo make again!

funnypeculiar · 24/01/2008 20:43

The big, makes enough for 20 ones ? I find they're fine on the outside but too runny on the inside. The runny ones are wonderful heated up with ice cream, though....

oxocube · 24/01/2008 20:44

I made them today for the first time in ages with my 6 year old and they are so easy and scrummy but the timing thing just annoys me! Who tests these recipes?

I'm baffled - I make the Feast brownies often and they are PERFECT after 25 minutes - they do stiffen up a bit as they cool.

McDreamy · 24/01/2008 20:44

Nigella and then she scoffs the lot

MorocconOil · 24/01/2008 20:46

I found the ones in Goddess too gooey. I made the brownies in 'Express' over christmas. With Nigella's hot chocolate sauce, and vanilla ice cream they are a pudding worthy of a top class restaurant.

oxocube · 24/01/2008 20:47

Does anyone have another recipe to try? I hate the ones which are like slices of cake as this seems to defeat the object of a 'brownie'. Or should I just persevere with Nigella's very tasty recipe and try to perfect the timings?

Hassled - I have Feast so will look tomorrow and give it a go. Ta!

Useful link to page on Nigella's website with amendments for the books.

andiemustlosehalfastonemore · 24/01/2008 20:49

oxo I just leave them in the oven longer and poke them occasionally to see how done they are
tbh I made a cheescake recipe of hers once and I think it stayed in the oven 3x longer than the recipe said

JNo · 24/01/2008 20:50

(although that page doesn't mention the brownies at all)

funnypeculiar · 24/01/2008 20:51

oxo, DO keep trying with Nigella's ones, they're delish once they're even half cooked

andiemustlosehalfastonemore · 24/01/2008 20:51

thanks jno I made the scones at the weekend and no wonder they were a bit flat I put in TOO MUCH BUTTER don't they proof read the feck*ng books before they print them

oxocube · 24/01/2008 20:51

JNo, that is incredible! And very bad editing/proof reading etc
