Vegetable skewers

I'm a decent cook but have never been good at barbecue (think stuff falling off skewers onto the grill, food that's half charred and half undercooked and so on). We do love grilled veg though (vegetarian household).

Store near me sells fresh veg skewers - so prepped and skewered courgette, onion, capsicum, butternut squash etc. But they have (obviously) not been marinaded. I love the labour and time saving idea of buying pre prepared skewers, but how do I flavour and cook them (oven or stove top)?

Personally, I wouldn't bother with a lot of flavouring - just a bit of olive oil and salt. Vegetables get a lovely smokey, sweet charred flavour (although I'm a bit dubious about the combination of butternut with the others - it takes longer to cook and doesn't do as well over a grill).

If you really do want a marinade, I do lamb and vegetable skewers and the marinade I use for that is olive oil, lemon, thyme and rosemary with some salt and it always comes out beautifully.

Oh, but I would serve with some kind of dip/sauce. As simple as hummus or tzatziki would be great. Or you could go with some kind of spicy tomato salsa or a green salsa verde.

I’m another one with doubts about having butternut squash and courgette on the same skewer. I’d definitely brush with oil before cooking and season. Could be nice with a garlic and chilli butter (I’d add after cooking in case the garlic burns). Or with something like a chimichurri sauce. If you want to marinade, I love smoked paprika, so that with some oregano could be nice.

Do the skewers come thing cooking instructions. I’d want to oven cook because of the butternut squash, and cook until the squash is tender.

I think the easiest option would be to brush with a flavoured oil, chilli, garlic are readily available but you can flavour your with herbs easily too.

Agree with others re marinades and cooking times.

If veg falling of skewers and not cooking evenly is a problem, I recommend these bbq trays to help. The ones below are out of stock but I’m sure you could find similar.

I usually separate the veg so there's only one type on each skewer. It makes it easier to control the cooking if one veg is cooking /burning faster than the others.
