What to do with lots of green peppers?!

I've just got a Too Good Too Go box from Morrisons, I can find things to make with lots of it but am stuck with around 12 green bell peppers!
I also got about 8 apples so was thinking maybe some kind of chutney or jam?

I'm not very keen on the taste of green peppers so anything to disguise the taste would be a bonus! Grin

Chop & freeze them. Add to curries, chillies etc for several months to come!

Slice & roast them with olive oil & s+p - completely changes the taste

I never cracked this one for veg boxes! Chop and freeze would be my choice too.

I tried freezing peppers before and they were sodden and soft when defrosted and mushy in my curry. I would not recommend freezing!

Thinly slice some cooked potatoes
Fry the green peppers, sliced potatoes and an onion in a splash of balsamic vinegar
Add black olives (cheap ones from a jar are best) at the end and top with a fried egg
Delicious and quick supper

When I was really poor, I'd buy up a few onions and peppers on pay day, chop and freeze and they'd last me all month as I eked them out over the weeks.

These days, I grow my own and yes, chop and freeze any extras that we can't eat fresh. I'm due to do a load tomorrow.

I make this pepper and sweetcorn curry. I find that the bitterness of the green peppers works well with the sweetcorn and it’s one of the few recipes I don’t substitute red peppers.

I'm on Team Chop n Freeze - then you have them every time you're doing fajitas, chilli, and patatas a lo pobre.

Roast them and then freeze, good for chucking in curries or pasta sauces.

Apple's - chop and peel, in a pan with a couple of tbsp water and cook for 5 mins until slightly soft. Now you have apple crumble or apple pie filling, add any other berries if you have them. Freezes well too. My kids love cooked apple with custard for pudding.

You can. You don't have to though. But if you want to use them in curries and soups a roast pepper is awesome in either.

I made a tortilla recipe on the Tesco website which was good and I froze some chopped ones and they were fine
