How to pimp up a cheese and potato pie?

Normally just use, butter, milk salt and pepper and serve with beans and tomatoes. I was thinking of adding the beans to the bottom of the dish and then layering with mash potatoes and cheese. What else can I add to add more flavour 😋

This thread looks up my street.

My mother used to make it with cheesy mash at the bottom, a layer of cheese sauce, then a kind of cheese souffle layer on the top. I was very disappointed to find other people's cheese and potato pie was basically cheesy mash. But that's how to pimp it up. And no wonder she didn't want to make it anything like as often as we wanted to eat it.

I'd serve the beans alongside the pie, not in it.

It's basically cheesey mash, baked. Layers of onions, beans, bacon, leek optional. Done in a pastry case for posh, when it is called Homity Pie.

leeks, peas, sweetcorn. With a super crispy top!

Mustard, sweet potato, marmite, leeks, Worcester sauce

OK so maybe a layer of baked beans with Worcester sauce and tomatoe puree do you reckon? Maybe chopped bacon, layer mashed potatoes with mustard and lots of butter grated chedders and slice tomatoes. Do you think this would work?

Remove the baked beans and yum.

Watching this thread with enraptured interest ...

All the other suggestions sound good, adding pesto as an option- with sun dried tomatoes and mozzarella on top if you want to get really fancy

Ooh I might make this!

Spiider · 12/09/2022 18:23

Cheese - lots of cheese - extra mature, leeks, garlic, bacon, mustard would be my suggestion!

TwoMonthsOff · 12/09/2022 18:25

nutmeg, mustard and a serious cheese like tallegio or Parmesan - don’t need much of that as it’s so strong (or maybe a bit of stilton if you like it)

TwoMonthsOff · 12/09/2022 18:26

Agreed baked beans inside would mix and make everything pink and soggy surely ?
beans on side

VladsPants · 12/09/2022 18:32

Ewwww to baked beans.

Tons of fried onions is what is required. And possibly bacon lardons.

And some gaviscon

chipshopElvis · 12/09/2022 18:36

The hairy bikers cheese, onion and potato pie is the food of the gods.

BitOutOfPractice · 12/09/2022 18:42

I invented a dish that I like to call “Crap en Croute” in order to demonstrate its genius.

in an over proof fish layer sliced boiled potatoes. On top of that, chopped cooked bacon. Crispy as you like. Then layer a tin of baked beans on top. Add a layer of grated cheese - lots. Then top with crumpled up sheets if filo pastry. Bake and then serve to the delight of all.

Seriously my DC loved this as it was the closest to beige food I ever served 😀

Never heard of this, & I was brought up very frugally.

Is it a regional dish ?

PeloFondo · 12/09/2022 18:45

I love it with pickled red cabbage

Possibly. Butter pie definitely is and that's even more frugal!

JanglyBeads · 12/09/2022 18:55

Yup I want the recipe as it's a favourite from childhood, my DM is long dead now sadly, andI cannot find a recipe that produces the same thing!

Does anyone add an egg to their mash? I've heard this before but wasn't sure what it actually did.

Yes if you add egg yolk into mash before roughing it up and baking it goes extra crispy.

dworky · 12/09/2022 19:11

Pesto

GreenyAnnie · 12/09/2022 19:14

Chorizo. Red peppers. Feta. Yes to egg but mixed with milk and olive oil worked into the potatoes all over. No beans, but that's just me...

MangoBiscuit · 12/09/2022 19:14

Well I'd never heard of it, so I googled, and found this recipe;

www.bbc.co.uk/food/recipes/cheese_and_potato_pie_52107

So that's what we're having for dinner. But as I've read the thread, I'm using extra cheese, part chedder, part parmesan. I did add the egg, as per the recipe.

SlouchingTowardsBethlehemAgain · 12/09/2022 19:16

Beans on the side,
More cheese,
Really cream those potatoes,
Tomatoes baked on top.
