Nigella's choc & pistachio fudge - apparently fool proof...well......

I've been meaning to post this for ages. I made some for Xmas; followed the recipe (obv), left it to cool and then put it in the freezer. It didn't set and certainly didn't look like fudge should (slightly grainy?), more very soft toffee. I didn't even bother trying to pick it out. What have I done wrong!

And did you remember to baste the cheese in gel? And I assume you remembered to flounge the pistachios first?

Could the grainy texture be sand? You shouldn't put sand in it. It's not included in the recipe.

Nah, mine didnl't work, either. I also went down the freezer route.

I took mine out, defrosted it, melted it, and made it into brownies.

Perhaps Nigella has some amazing fifty thousand pound Smeg freezer or something that makes it's own icecream as well

You need to train your eyebrows using the rapid return method. Remember, don't speak to them, it encourages them, just put them back above your eyes each time and after a while they stop misbehaving.

Did you use real butter?

My FIL made it but used some noncey olive oil based spread thing. He remade it with butter and it was fine.

Yes Duchess, I did; it was still crap though. I'm sure someone posted up before Xmas that they'd done it and it was fantastic. I'm probably not posh enough now that I've thought about it a bit more!

yes - Green & Blacks 70% cocoa, as per the bible states. I'm going to sit and sulk in my store cupboard, along with my jar of virgin cherries.

this happened to mine too, although it did set. It was a bit grainy. I think it was because the chocolate got too hot. It still tasted lovely though (I always manage to balls up the most straightforward recipe )
